I recommend cooking the bacon just a tad (not to the point that it's crispy, and still able to bend around the potato football) beforehand so it wont get as rubbery, or has a risk to be underdone/ unevenly cooked. The first two I made were rubbery or a tad underdone, so baking it with a weight on top of the bacon made a big difference, it made the bacon crispier, and made the texture more satisfying.

Y’all I made it and it is soooo goooodd, I used 6 potatoes (mine were on the smaller side), regular white mushrooms, I didn’t have sweet sake soy sauce so just mixed a bit of Mirin and soy sauce with the wine, and only had room for 1 pack of bacon but all in all so yummy
now i want you guys to try and make one of those insane foods from toriko... witch i'm pretty sure is impossible.......... yo if you guys can find a way to make a real life representation of the jewl meat i will praise you like the gods you are
