I was there earlier this year in Mar, same exact Shibuya location…very good service…Japanese all you can eat restaurant usually have very strict funky weird rule… my waitress took her time and very patiently explained everything to me…even though they had English menu with rule explanation but it,s more like Japlish to me…overall, great experience, highly recommended!

It is often quite difficult to try and find a place by hand and sometimes I can't find them at all event hough the address is given. I know, it is strange, but the Japanese addresses are sometimes not recognised by google maps if you simply copy paste them. Maybe because it is done from outside of Japan ? I don't know. The reason is the same as you jacobsebastian, unlimited time to enjoy. All-you-can-eat restaurants with unlimited time are very rare.
The prices of ikura and uni are soaring.That seems to be the main reason for the limited number. If you want to eat a lot of ikura and uni, Hina sushi in Ginza might be good.

It is a little bit 怖い to visit a restaurant such as this when you are visiting from another country and can only read hiragana. However your explanation is very thorough (and very enjoyable!) and now I feel braver about visiting one of the Tamasushi branches. I did not know that temaki sushi originated at Tamasushi, as my young daughter adores nori the temaki style is a big favourite. We are very excited to come here in August. Seems like you like lean fish and shellfish. I actually went to this restaurant in Tsukiji the first time I went to Japan in late 1990s. Back then, there were no all you can eat or at least I did not know about it. Looks like the menu selection are all in Japanese. Will they provide one in English or should we use our phone to translate? Do you anticipate that this deal will continue into March of this year? Tsukiji Tama Sushi in Shibuya reopened in April 2021. It is still new and very popular because all-you-can-eat sushi for unlimited time is rare. Therefore, I think the all-you-can-eat will continue. All of the restaurants are attractive in their own way, so I can understand why you are confused. Tama Sushi offers unlimited hours. If you want to eat sushi slowly, this restaurant is good. However, there is no English menu and sea urchin and salmon roe are two pieces each. It is not suitable for those who want to eat a lot of sea urchin and salmon roe. Next is Itamae Sushi, where the sea urchin is a limited item. There is no limit to the number of pieces you can order for salmon roe and other sushi. English menu is available. However, the stay time is 70 minutes. You need to be very fast to eat. Next, at Hina Sushi in Ginza, each table can order up to 20 pieces of sushi. It is not suitable for a large group. If you are alone, you can eat quite a bit in 2 hours. There is no limit on the number of pieces of salmon roe and sea urchin. English menu is also available. I love sushi and can eat relatively a lot of it. I ate slowly because there was no time limit. I think I was in the restaurant for about 4 hours while taking videos.
The raw fat of amberjack is tight, low viscosity, and has a crunchy texture. I used the word "crispy” to describe such lightness, but there may be a more appropriate word.
the "crispy" texture is usually the fish muscle still in the rigor mortis period (it's what make corpses stiff). depending on the species it could be anywhere up to 48hrs since its death.
Its an asian thing to describe the consistence of specific food as crispy. For exemple if we eat cooked or raw squid then we describe the meat as crispy because of its freshness (even though it not fried). Its kinda hard to explain.

It is never RUDE. It is common and preferred at sushi restaurants to order by specifying specific items. Some sushi restaurants, however, may only offer a "leave it to us" course.

There is no English version of the all-you-can-eat order form. However, there is English for sushi items.

That's too much rice for me. He's piling on the rice when u start to order platters. Wish we can ask for less rice or sashimi it. So many to try...
He's giving u alot of rice cos u ordered alot and he's afraid of losing profit. Rice makes u full faster.

All-you-can-eat sushi is for those who can eat a lot. This restaurant has a sashimi menu separate from the all-you-can-eat menu. Better to order the regular sushi menu and sashimi.
Is it rude to ask the chef if I don't like "Saba"? or Salmon"?
It is never RUDE. It is common and preferred at sushi restaurants to order by specifying specific items. Some sushi restaurants, however, may only offer a "leave it to us" course.
