Wow! another delicious and healthy dishes. The golden brown fried chicken wings looks juicy, crunchy and yummy! The mutton hot curry with rice oh yah! I enjoyed your choices on the dishes. Thank you and Ying also.
That fish otak looks amazing in that blackened banana leaf! 😋 The fish paste is mixed with a paste of onions, garlic, ginger, lemongrass, galangal, chilies and coconut milk, with tapioca starch or cornstarch to set it. Haven’t had it since 1985 or thereabouts. But try I can still taste it all! The sambal is sambal toomis - thank you Mark for reactivating my memory tastebuds!!
I really feel like I am missing out on a key part of living because I have not had the pleasure to enjoy all of these foods that Mark is sharing with us! At least I can Live vicariously through him, while he eats, for a little while 😂!
the best i have tasted authentic 10/10 is changi village nasi lemak at $2.50.but it only open night time 6pm to 10pm.its the sambal and rice fragrance that attract me.its long queue nightly
G'day Mark! Regards from Brazil. Given that I have asian background, I love your asian food trips. My 4yr old son also enjoys your videos that he imitates your "pleasure face" sometimes when he eats....You should come to Brazil and eat some regional foods. You won't believe the diversity we have.
I used to patronise this stall too before the renovations. I think the old man had stall number 1 last time. The gentleman was Indian by descent if I remember correctly. He changed the nasi lemak game in two ways. Firstly, he served hot freshly cooked rice. Secondly, he used the Basmati rice species, which was and is still very expensive. Nasi lemak previously was a cheap packaged dish that you bought, transported and ate at a different place or maybe not. I remember the old man was quite proud of his sambal with dried sotong. After the renovations, I don’t remember seeing him again and the food quality dropped.
Nasi padang from old rendezvous restaurant in the 70's the best! The malay/indonesian stalls at the recently closed longhouse foot center were awesome! Will try this stall soon.

Nasi Lemak is such a staple meal, and it's absolutely the one thing that I always miss when I'm away from Singapore. 'Lemak' means 'fat' or 'rich'. It has evolved over the years, and it's possible to have many different renderings of Nasi Lemak made by cooks and chefs across a wide spectrum of classes and races in Singapore. Nasi Lemak cooked at a chinese stall is completely different in taste from a stall that's run by Malay proprietors. One can write an entire book about this. And maybe someone should!

my favourite combination of nasi lemak is just chicken rendang with a lot of peanuts and anchovies.......... I love nasi lemak as long the sambal are great.... sweetness and spiciness are well balance.... that's why I prefer to cook myself
Actually, otak2 has it's own sauce, which is usually made of peanuts, mix with chilly, and lemon. And for the taste of the sauce, they use all different kinds of spices. Again, the potato cake, its actually is frikadeller from Netherland. Most common perkedel are made from mashed potatoes, the very delicious ones are made of ground potatoes, minced beef meat and spices.
I do miss the foods from s,pore where I came from I can,t get the foods where no morning glories and many other good.I like to cook at home but I cannot get the stuff to cook with . Thank You both for showing me you enjoy it. God Bless

Since it is a Malay dish, I prefer that to other takes on it. The original is best to me, but yes a food traveler should try different varieties. 😅
