I was just re-watching the movie (it's been so long I couldn't remember 90% of it, not to mention I was pretty young last time I did) and got that exact feeling. It's a newly created family enjoying their first road trip that they know could also be their last. Tragedy can strike instantly and it eventually does. The music conveys that this moment shouldn't be taken for granted because the happiness will inevitably be temporary.

Everyone is infected and everytime you fall asleep you are at the risk of dieing, what do you do? YOU MAKE THE MOST OF IT! I love this song as it shows how sometimes it isn't that bad. (forget later on in the movie)
not relevant but the main characters don't appear in 28 weeks later so i suspect they have been infected, maybe could be an easter egg in 28 months later when it comes
