I think if you type your email address in there, and it is already in the customer database, it will ask you for the password, otherwise it will ask for the account registration info? A lot of store websites work that way.
not correct, most modern websites are not storing your credentials at all - they use 3rd party authorization like OAUTH and OIDC - which means it offloads auth to you the customer by letting you use facebook, google, Microsoft whatever platform you want to link to your profile on their website. All the website stores is a token that the 3rd party gives back that serves as your "hall pass". The behavior you're describing is browser / cookie behavior - which can be interrupted or disabled completely.
Have you looked into nuxt? You can do all of this and everything you mentioned wanting to possibly do/ decided not to do with just a couple nuxt modules and a few lines of code. It's a really nice framework imo

Both thumbs up for using Hugo. From a security perspective this is the only way to go to be reasonably secure.

Does Hugo handle image processing (ie for responsive images, resizing, lazy load etc)?

I use VS Codium which is the open source project based on ms visual studio and have no issues
