These are aluminum which I certainly would not put food on. Amazon reviews note that newer version is much thinner than pans sold a few years ago. Are there any that are stainless steel?
All Clad makes a stainless roasting sheet. And 360 Cookware makes a stainless cookie sheet in 2 sizes. The latter gets such great reviews, I think I’m going to try it. Aluminum may cook well but it is toxic.
i keep seeing amazon reviews on the nordic half sheet pans that there's a metallic substance that comes off the pan and appears on a towel you use to wipe off. i don't want to ingest metal after baking with this. is this still recommended??
When I need to purchase something, I want to know that I'm buying the best value. Consumer Reports and America's Test Kitchen have never disappointed me, but New York Times Wirecutter has been a letdown.

My big thick sheet pan finally warped the other day. I was making butter cookies, and when I checked on them after five minutes, they'd all been tossed around. Fortunately, none of them stuck together, and they all stayed in the pan. I get the sense that once a pan warps one time, it's probably going to keep doing that.
Since the interior width of most ovens are less than 26" (usually 25" or less) why are half sheets 13"? You can only fit one per rack. Wouldn't it be better if they were 12" or 12.5"?
SeikiBrian Thanks, I understood the origin, I was more asking about the logic of applying a commercial standard to a product for home use. The logic of a half sheet is that you can put two side by side in a commercial oven. I'd think you'd want a pan for your home you could do the same.
SublimeSimplicity Ah, got it. Since most home cooks are cooking for fewer mouths than commercial cooks, one pan is usually enough. There are, of course, smaller pans available for home cooks, they're just not called half sheets. Jelly Roll Pans come to mind. I don't think I've seen a wire rack for those, though.
Isn't getting food in contact with aluminum considered hazardous? Besides, how do you wash aluminum sheets if they cannot be washed in a dishwasher as it would start to dissolve aluminum?
Dishwashers don't dissolve aluminium. They can discolor it. The pans need to be hand-washed. They're so big that they probably wouldn't fit comfortably in a dishwasher anyway. They clean up easily though.
@@tiawilliams5690 Dishwashers may not dissolve aluminum, but dishwashing detergent can. At high pH, aluminum dissolves as Na2Al(OH)4 (sodium aluminate).
I have pans that rusted underneath the lips because water gets trapped in there after washing. Would the Nordic one help with that? I saw that the lip is also curled.
Does the oil burn into the pan when roasting? I think some people have roasting trays and cookie trays bc of this. I usually do all of this with a parchment paper

why wasnt the heignt of the rim of a baking sheet a major issue for short people like it is on a saucepan? I hate it when the sauce pan is too tall for me.
Because the difference between a half inch and an inch on a baking sheet isn't as much of a detriment for short people as the difference between 5 inches and 7 inches on a saucepan.

Even if there had no health risks, I don't want the aluminum. The only baking pans I could find made out of the same stainless as pots are the high wall, straight or round roasters but I actually want sheet pans, full size preferably.

Yes, if they're not cared for properly they can rust. Some people just toss everything into a dishwasher with harsh detergent. Don't do that. Dishwashers are for dishes. Good cookware and bakeware should be hand washed and thoroughly dried, even if it says "Dishwasher Safe" on the label.
