My favorite Good Friday meal. Boiling & cooking Saltfish shrinks it, try soaking in cool water. To cook sauté Saltfish remove from heat, cook your vegs add Saltfish at end.

Yes, I soak & change water 2-3 time (20-30mins each time)First soak I leave it whole as it gets softer break it into smaller pieces for second or third soak, taste for salt. This is how I was taught: layer Saltfish in a dish, sauté onions, garlic, tomatoes,pimentos ( cut into rounds) in oil & ketchup for color, salt, pepper,about 1/4 -1/2 cup oil ( oil is what makes d sauce). When veg softened pour on Saltfish, the heat will ‘cook’ d fish.
Use d lg tomatoes, what we call slicers in Trinidad. It’s good on salt salmon or salt mackerel too. Salt salmon is pricey & extremely salty but good. Cut into palm size, soak overnight with lime & boil. If it’s still salty flake fish into bite size pieces & soak in cool water about 10mins or taste. That’s our Good Friday meal every year. Every avocado season: Saltfish (soaked & shredded bite sized) diced avocado, diced tomatoes sometimes diced boiled egg salt/pepper, olive oil simple but effective & tasty.
