    Ingredients:
    500g boneless, skinless chicken thighs, cut into bite-sized pieces
    2 tablespoons soy sauce
    1 tablespoon chili sauce
    1 tablespoon ginger-garlic paste
    1 teaspoon ground black pepper
    2 tablespoons cornstarch
    Salt to taste
    2 tablespoons vegetable oil
    1 onion, diced
    1 bell pepper (any color), diced
    2-3 green chilies, thinly sliced
    3-4 cloves garlic, minced
    1-inch piece ginger, julienned
    2 tablespoons tomato ketchup
    1 tablespoon chili paste or sriracha sauce
    1 tablespoon soy sauce
    1 tablespoon vinegar
    1 tablespoon sugar
    Spring onions, chopped, for garnish
    Instructions:
    In a bowl, marinate the chicken pieces with soy sauce, chili sauce, ginger-garlic paste, ground black pepper, cornstarch, and salt. Let it marinate for at least 30 minutes.
    Heat vegetable oil in a pan over medium-high heat. Add the marinated chicken pieces and cook until they turn golden brown and cooked through. Remove and set aside.
    In the same pan, add a little more oil if needed. Sauté diced onions, bell peppers, green chilies, minced garlic, and julienned ginger until the vegetables are tender yet crisp.
    Mix in tomato ketchup, chili paste or sriracha sauce, soy sauce, vinegar, and sugar. Stir well to combine.
