    simple recipe for Aloo Gobhi
    Ingredients:
    - 2 cups cauliflower florets
    - 2 medium-sized potatoes, peeled and diced
    - 2 tablespoons oil
    - 1 teaspoon cumin seeds
    - 1 onion, finely chopped
    - 2 tomatoes, finely chopped
    - 1 green chili, finely chopped (adjust to your spice preference)
    - 1/2 teaspoon turmeric powder
    - 1 teaspoon coriander powder
    - 1/2 teaspoon cumin powder
    - 1/2 teaspoon red chili powder (adjust to your spice preference)
    - Salt to taste
    - Fresh coriander leaves for garnish
    Instructions:
    1. Heat oil in a pan or skillet over medium heat. Add cumin seeds and let them splutter.
    2. Add chopped onions and sauté until they become translucent.
    3. Add the green chili and sauté for a minute.
    4. Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
    5. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
    6. Add the diced potatoes and cauliflower florets. Mix them with the spice mixture until well coated.
    7. Reduce the heat to low, cover the pan, and let the vegetables cook for about 20-25 minutes. Stir occasionally to prevent sticking.
    8. Check if the potatoes and cauliflower are tender. If not, cover and cook for a few more minutes.
    9. Once the vegetables are cooked through, garnish with fresh coriander leaves.
    10. Serve Aloo Gobhi hot with roti, naan, or rice.
