If a restaurant knows a food critic is coming or is already in the restaurant, the restaurant staff is probably going to go out of their way to ensure the critic's experience is exceptional, but that may not be representative of the quality of service that an average random customer would experience. So the newspaper isn't going to inform the restaurant about a review in advance - if they're calling, it means they've already been there. I don't think Adam Shapiro (CDC from Ever) had anything to do with the review. He just wanted to try the food without letting the kitchen know he was there, so he would be able to have the same experience as any other random diner. He knows Carmy personally, because they worked together under Chef Terry when they were learning the craft.
