In India the fries are cooked in vegetable oil ( refined mix of palm oil, soyabean oil sunflower oil mustard oil etc) , but in the west they use canola oil ( refined cotton seed oil) , that's why they taste different.

in the US McDonald fries are cooked in animal fat and not in vegetable oils as in India - that makes lots of difference in taste. Besides, the potato is treated with special animal fat based flavoring in the US which also adds to its taste among US citizens.
