Sometimes I have difficulty reading the text because it blends in with the original Japanese subtitles. Maybe you can consider choosing white as the primary text color with another strong color as the text outline. I used to do subbing before and from my experience, the subtitles show up very clearly that way

oops, I just saw your comment and want to add on something. You may consider putting a shady box (of some % opaque but not totally) over the Japanese subs. The English subs would be on this shady box (I can't remember what exactly the function is called because it's been some time since I last subbed). Just my suggestion from experience. You can play with Aegisub until you are satisfy with the typeset. There are a whole lot of options to customize and you can just choose what works best for you.

Subtitles are terrible. It’s distracting and shouldn’t be bright colors with a changing mode. Not cool 👎🏼
