There is potentially infinite vairiety among convex grinds. I'd say the Bark River is a true convex saber grind. The Joker has convexed primary and secondary bevels. These could be blended into one but without serious rework the geometry would still be far more robust. The something that the convex has is actually the absence of shoulders which wedge and act as speed ramps to smooth swift cutting.

What you are saying about stropping convex vs fixed angle edges might need some reconsideration. You use the phrase "rolled edge" which has two clear and distinct meanings that you might be overlapping. In more archaic terms a rolled edge is a convexed edge. In more modern terminology what people like Joe X usually mean by rolled edge is that the apex has rolled over. So if you hone or strop too steeply then you are indeed mechanically rolling your apex over and this is not good. But this can be done on the apex of any blade, the grind makes no difference. If you hone or sharpen your blade that currently has shoulders at a lesser angle than that of the fixed-angle bevel, you will be "rolling" the edge in the archaic sense of the word, which will also improve your cutting performance. It will make the cutting bevel less stable but better cutting, of course. People usually avoid doing this so as not to compromise the factory finish and aesthetic of their knife, rather than because they seek to maintain optimal cutting performance. A blade with sharp angled shoulders anywhere is not optimized to cutting but to other things. The geometry on that Bark River seems very similar to that of a Rockstead. True convex saber, very slicy. It is the ultimate cut, by my lights.
