I'm a student of Dairy Technology and I think I'm qualified enough to answer all your queries.
1. Colour difference in milk is due to presence of Carotene in cow milk, which gives it yellowish colour. Since gold and shakti aren't marketed as buffalo milk, plants can mix both cow milk and buffalo milk to obtain the resultant of 6% fat. Upon boiling the carotene imparts it's yellowish colour.
2. Fat is the lightest constituent of milk, is responsible for the texture of milk solids. Higher fat would lead to softer texture, that's the reason why malai from shakti was harder and more viscous, and didn't flow easily. Now question arises that malai from slim n trim should be more viscous and hard because it has the least fat. Slim n trim was watery in texture because it didn't had enough fat to hold its film together.
3. Talking about the taste difference, lactose (milk sugar) can depend upon the type of feed given to animal and dry matter intake. Also it depends upon the age, number of childbirths, and stage of lactation (period during which animal gives milk). Animal in early to mid lactation stage can have higher lactose in comaparison to ones in later stages. The breed is also a major factor. Therefore to sum up, there are a number of environmental and biological factors that govern the composition of milk. And for the same reason you found the gold a bit sweeter than tabela wala milk.

the color of amul milk is yellowish because it is not full buffalo milk, it is cow and buffalo milk mixture... Amul has separate cow and buffalo milk packets also apart from these...
Yaa exactly amul buffalo milk packet is white and blue colour combination packet and amul cow milk packet is white packet and 1 cow is drawn on that.

If you boil cow’s milk it will turn yellow like the amul that means it is cow’s milk but the other one is buffalo milk which when boiled turns white and white Makhan is also made from buffalo milk and the yellow butter is made from cow milk
Amul butter is yellow because they add yellow color to it, you can check the ingredients behind the pack..

The yellow color in cow milk is due to the presence of carotene. The amount of yellow color in milk depends upon the amount of green feed given to cows. This is because, plants do not contain vitamin A, but contain its precursors (provitamin A), the carotenoids.

Raw milk of cow or buffalo gives you more creamy and thick and pale yellow malai after boiling….
But this Amul milk is mix of cow and buffalo also it is pasteurised before packing…. The gold packet is more pasteurised than other 2 types so due to all these things the malai we get is more yellow in colour and thick as well…😊

Not completely they use buffalo and cow milk both. But the ratio of buffalo milk is more than cow milk. For the proper fat they use both milk.The Buffalo milk is high fat milk, generally going 7+% Fat , so Amul Gold is to be made from Buffalo milk, by separating out required quantity of fat/cream from it, to bring it to 6% Fat and 9.0% SNF.
But this is not compulsory and some times if there is not enough buffalo milk, then cream/fat is added to the cow milk or mix milk, to bring the fat to 6%.
But I request everyone to limit there milk consuming capacity 🙏🙏

Its because the milk companies add milk solids in normal milk and boil and seperate and also they boil and add some chemicals also thats why the companies milk tastes different then the milk which you get directly from dairy

You shouldn't cut the triangle when your opening a milk packet. That triangle cannot be recycled. Always put a cut and pour the milk. The whole packet can be recycled.
