      I buy 20 pounds of russets at a time when they're on sale and keep them in a metal storage cabinet in the cool part of my basement. They last a long time and don't turn green when they're kept in the dark. If they start to sprout, I just knock the sprouts off with my fingernail.

    I a 75 and still going strong, and have never discarded sprouted potatoes,just rub them off!! Just another thing to sell more stuff more expensively, like sell and use by dates!!

    I just break the sprouts off. I leave the skins on. I've never gotten sick from it. I have no intention of changing anything either.

    I just knock off the sprouts and cook the potatoes. I cut out bad spots. I also use potatoes as a bug out food in the woods. I plant the eyes and let fate decide. I have over a dozen established "volunteer" colonies. I do visit them in the fall and do a light harvest. I get about 200 lbs. I could get about 4 times as much. I no longer plant potatoes in the garden.

    Potatoes turn green when they're exposed to light, so keeping them in a dark, cool place will lengthen their storage life considerably and slow down any sprouting.
    The sprouts do not make the potatoes toxic. They're brittle and can be knocked off with a fingernail before the potato is peeled and cooked.
    Potatoes contain a high amount of potassium...a lot of which is in the skin, so peeling potatoes reduces the amount of this beneficial nutrient.
    If you keep potatoes in a dark, cool place...not the refrigerator...they will last for months. They'll get wrinkly, but will still be safe to eat.
    If you don't have a dark, cool place to store them, it's best to buy a few loose ones fresh from the store instead of a bag...and check them for any green color before you buy them.

    I've eaten sprouted & green potatoes my entire life. Gasp! I've even eaten a potato that had a rotten area. (you simply cut the area away from the rest of the potato) omg
    This is why so much perfectly edible food ends up in landfills, too much misinformation being passed around.

      Was told the only time you don't eat them is when soft or green , have eaten soft and cut any green bits off , any sprouts just get pulled off , keep them in the dark , sometimes baby ones in fridge and had them for months , supposed to keep the out of plastic wrapping but I just open the bag well

      Sure - me too - well worth a minor risk, and cuts down on World Waste, which is more of a problem.. However, spuds with more than a greenish tinge are aesthetically and taste-wise displeasing, and, out of consideration, I would not give them to an unwitting 3rd party, or a small child - imagine your feelings if one day someone fell ill from your disllike of 'waste'. Take your own risks from choice, but dont inflict them on the unwitting.

      Just remember to peel off all the green . When exposed to sunlight potatoes start turning green , they are make their own pesticide . The part that has not turned green is still ok ! to eat !

    When I was about 10 years old, I was told potato sprouts were poisonous. So I have always carefully removed them. I have always enjoyed the crisp skin on a baked spud. Never seemed to stunt my growth!

    I typically plant potatoes that have gone past perfect. We do not remove the skins as they provide fiber.

    I was raised in Idaho where potatoes are a staple. Sprouts might be poisonous but not the potatoes. We have peeled many very green potatoes and sprouted potatoes.

    Two things... First, when we were kids back in the sixties and early seventies, my Mom and great aunts would occasionally give us a slice of raw potatoes when they were making dinner. Never harmed us and it was tolerable to snack on. Second, you didn't mention storing potatoes and onions either together or near each other. I have seen AND smelled the results of that and it's not something you'd want to clean up either! I am amazed when I tell that to people and they think I'm nuts. One person was like that doesn't make any sense. I suggested that she take one potato and one onion, place them together in a paper bag, close the bag and placed where you would normally keep your potatoes in your pantry and then check the bag in like three or four days. Four days later she called and said, "Yep, note to self, never EVER place onions and potatoes together! God, I was worried that I wasn't going to get that smell out of my pantry!" Got another convert that day...

    When I was in 1st grade each student suspended a potato over a bowl of water to observe how it grew. After the project I took mine home. My mother gave me a nice vase and it grew in my window until was 18 with just occasional watering and a trim. I was really bummed out when we moved to another state and it got discarded.

      I was wondering about that yesterday. I was peeling some potatoes 🥔 that I grew this past summer. They have sprouted eyes and as I was peeling them I say to myself, I wonder if I planted the eyes with the peeling would they grow? Thanks for the encouraging comment.

    I have a few potatoes like that in my kitchen right now, and I was thinking about cutting that stuff off and making something with them. They are fine. I dont like them when they get too soft, but its whatever. I am fine and they still taste good.

    Just a suggestion for anyone who has access to a plot of ground. What I do with all of my tubers potatoes,beets ,carrots, turnips etc is I have a low spot in my yard and line it with leaves off the trees then I lay my tubers down and then over them with at least 12 to 18 inches of raked leaves then place on old heavy blanket on top to keep them from blowing away. It protects it from the harshest freeze and keeps them absolutely fresh.

    While serving on KP duty during Army basic training, I used to drive the other guys on my detail up a wall. When cutting spuds for home fries, I'd go, "One, two for the Army, one for me." Yeah, I'd eat about one slice in every three or four that went into the meal that day.

    I buy a huge bag of potatoes when they are on some super sale and bake them all and put them in the freezer. Quick to cook in the nuker and easy to slice after a 1 min thaw in the nuker to then put in a pan to fry. Easy to keep frozen. Con is they don't make really good mashed potatoes, but I like them sliced and fried mostly.

      I work in a grocery store, we cover them when the store closes with paper. Can confirm, the lights in a retail environment alone can green a potato too.

    I eat green potatoes and the peels,no problem yet. I grow potatoes and the grocery store sprout potatoes are always good for growing.

      I have 2 ice boxes and I use to store my potatoes in the second ice box and it seemed they lasted a long time. Then I heard you should NEVER put them in the ice box, so I stop doing that. Now my store bought potatoes last, inside of a card board box , for only, 2 weeks and then they are rotten. I think I will put all those tators back in the ice box, once again.

    I'm dirt poor as they say and I've kept potatoes for months in the refrigerator washed before storage. Never had a problem with them. Had some sprout after 6 months. I guess you could say like that movie The Martian. You eat what you got.

    Nothing about chemical sprayed on some potatoes for a sprouting inhibitor and to kill the tops before harvesting. Also do not wash potatoes before long term storage.

      Cover with soil. Wait until the leaves appear. Whe tall enough reap the potatoes underneath! If too small wait a bit longer.

    I have planted sprouting red potatoes for 40+ years with huge yields and have never had a single problem, not one. The only thing extra I do is sprinkle them with sulfur before I cover them

    If you buy in bulk its hard to tell if they have that green tint. Buy potatoes single. Also, potatoes are sprayed to prevent sprouting before coming in your market.

    All you have to do with your sprouded potatoes is plant them and get more potatoes, or just cover them up with your lawn grass after you mow, new potatoes will grow. So if you throw them out, your stupid.

    I have to peel one potato extra when making them because I eat them while cutting them up. I love raw potatoes. Never heard not to eat them before this. Been eating them for 60 years.

    Some bad advice there about only selecting the perfect looking fruit or vegetable - that's why millions of pounds of perfectly good food is wasted in North America every year. Obviously avoid mold/fungus etc but a blemish, discolouration, odd shape etc don't make the product bad! Anyone who grows their own food knows this.

    Just cut off the parts sprouting and you are good. Been doing that for years still alive. Myself I just toss the parts unusable and also potatoes that grow too much on the back yard not composting them the chickens and Pigs and other animals that run wild will eat the scrap food

And then the cost of this crap they make millions off us... And then a few weeks back bought a bag yellow gold potatoes at Sam's Club ! Left on wooden chair in my kitchen for about six or seven days ! So I begin to get this bad smell and couldn't understand where it was coming from ! Guess What... I look at those potatoes sitting there one day thinking nothing of it ! Because potatoes should have some what long shelf life Right ! Nope they were sitting in a black liquid water like substance rotten ! And that was the smell I was smelling... It was horrible ! And actually turn my wooden oak seat of my chair Black ! You talk about upset upset wasn't the word for it ! My blood was boiling ! So I started to go out and look who is selling this JUNK ! Well for anyone reading this other than Dee ! Start reading your Labels ! It will shock you where our food supply and what countries they are coming from... And not just your Veggies Also Your Fruits ! See they started with our beef an pork ! Sending out our Good Feed Beef And Pork Out ! To other countries in return ! Would ship there god only knows what there feed is ! And send their low grade junk pork and beef back from there countries ! I bet alot of you didn't even know this ! So now I think there taking our good veggies and fruits and our doing the same thing ! And only the Privilege Gets Top Shelf ! You think am kidding ! Start smelling your onions don't smell the same do they like alot of other things when cutting... And your everyday Drinks ! Start smelling it and tell me what your smelling in it like your Soda's An Gatorade... And I just know it ain't just me ! I won't even touch it no more ! Because there is something going on People !     I cut out the sprout and eat the potato. I find that a sprouted potato will eventually soften. At that time, I would throw it in the compost. In no universe would I carefully vett every entry into my compost pile. I don't put meat and fats into it, just vegetable matter.

    They do lose a little flavor & they get kind of soft & rubbery . However they are still ok to eat . They just take a little extra effort to prep .

    I cut out the eyes, but I have not peeled a potato in 45 years. I've recently read that twice cooked potatoes have a lot less sugar and so are better for you.

    Purchase a few russets per week. Cut into French fry strips and blanched, perfect for my Air Fryer.

    Just keep them cold (refrigerator) and in the dark, they will last much longer. If you have an old second refrigerator in the basement, that's a great place to store a larger quantity of them in.

    I eat them, but sometimes I forget about them to the point where the whole bag is sprouted and then it's a race against Time to eat them all and I wish I had More ideas of what to do with them

    The reason so many are ending up in land fills is because they aren't fresh when you buy them. Back in the 1970s I used to buy a sack froom the farm every six wees or so. They easily lasted six weeks and I never had to chuck any. Nowadays you buy a bag from the Co-op and they are soft and sprouting in a week. It's a scandal for public health, the economy and the environment.

      @@EC-dz4bq I always do. Same with all vegetables. You should also keep potatoes in the dark if possible. Doesn't make much difference with modern supermarket potatoes though - they still don't last like they used to - hence mountains of unnecessary waste.

    I never bought a potato in my life. They are so easy to grow. I let them sit in the ground until needed. When it's freezing I cover the hills with some plastic.

    Comical that some seem to have got the idea sprouting potatoes are any problem. I harvest mine and they keep for about 7 months, dark obviously, dirty not washed, and cool. Just compost the peelings or left overs, never been a problem.

    I've been eating sprouted and / or greening potatoes for decades. So far no problems... people are so quick to throw stuff out, but anyone who's worked in diner /blue collar kitchens knows a bin of sprouted potatoes ain't getting thrown out by the owner / management.
    And that's only a teaser; if people only knew how much aging produce was hacked up and served to them in a restaurant, without incident maybe they'd adopt the same frugality in their own kitchens.

    Which potato (eg King Edwards, Whites, Cyprus) are the quickest to cook?
    Whites, l think, took forever well over 50 minutes! Whereas the others took 30 to 40 minutes.
    Worth knowing since you will save some energy in cooking costs.

    Potatoes harvested with skins that have set can be stored if stored properly (cool & dark) will store for 10 months any sprouts can be brushed off they may even have gone soft but still perfectly edible!

      I've also taken a piece of raw potato or two out of the water before it boils lol
      I find it delicious, but nothing more than a piece or two.
      What a complicated relationship I have with this...'stem'.. I never really knew thee

    Oh for heaven sakes. I’ve never heard so much on the beautiful potato ever. Wash,Knock off the sprouts, remove the eyes, remove the bug holes, peel don’t peel. Up to you. I never have. Bake, boil, whatever. Enjoy. I always eat a piece of raw potato. Just cause it’s so good.

    I munch on raw potatoes all the time as I'm cooking, but I have since I was a kid. I would eat home grown potato skins but I NEVER eat store bought, I peel it and the skin and sprouts go in Garbage😁

    Lol just cut the roots off, then use. If paranoid use tip of potato peeler core around the spout root site.
    I do remove any green flesh.
    Then wash, and skin or not. Jacket potatoes skin are a no go, same with wedges or potatoe skins.

    Best way to freeze potatoes? Potato pancakes. Cool and freeze cakes individually in plastic wrap or well sealed wax paper. Potato PopTarts!!

    Eat them. Just Clip the sprouts off and peel. Take the sprouts and plant them. Peel away the green if any.
