    Which are the main differences, comparing it with the other models of Compacta?
    Mainly four big differences:
    1) A brand new stainless steel door for the upper cylinder. This door is easier to use, thanks to the innovative spigot. Faster to clean, beacuse it has less pieces and they are easier to remove. And it is also more durable, thanks to the fact that it is 100% stainless steel.
    2) One more inverter! As always, in all our Compacta Vario models, we already had two inverters (one on the beater and one on the compressor) in our batch freezer. Now we have the third one, on the beater of the pasteurizer! Thanks to this inverter we can regualate its speed, and we'll be able to produce a wider variety of products, with more flexibility.
    3) The extraction door of the pastuerizer has got a wider hole. That allows us to extract also really thick products. Again, to be able to produce a wider variety of recipes.
    4) The standard equipment of CompactaCHEF has two beaters for the pasteurizer: one specific for pastry and another one specific for gelato.

      Well this machine has two cylinder, Upper is for Pasteurization/cooking and lower is Cooling/Freezing also this machine has much advance with several preset program. Which is suitable for Icecream, Pastry and Gastronom foods.
      As per video that is cream so they transfer those cream from upper to lower cylinder for chilling purpose.
      That's why it's in liquid form while dispens from machine.
