Smothered Turkey Wings Southern Style/ Wings With Gravy

- For every grandmother or mother there is a recipe for making smothered turkey wings. I will show you mine. Comfort food at its best. I found packages of turkey wing flats at my local grocery store which I knew were destined to be smothered in a rich creamy and savory gravy. They did not disappoint.
Simply seasoned with spices you like and set on a bed of aromatic vegetables. Bake covered for about 90 minutes and then uncovered for about 30- 45 minutes. The wings were baked to tender and browned but NOT falling off the bone. I made my gravy separate from the pan of baked wings allowing me to remove a lot of the fat from the roasting pan easily. This minimizes a greasy looking gravy. I then make my gravy by combining equal parts of butter and flour, then cooking the mixture to my desired color. I then added some chicken broth and some of the wing pan juices (fat skimmed off). I covered the wings with the gravy and returned to oven to cook an additional 20-25 minutes. I prefer tender, bite through wings but not falling off the bone. Enjoy
