With the way the Russian Tips are designed, you can't really make the flowers shorter. They are meant to be really 3D and come out at you vs traditional piping tips.

Great video to show technique, but that's A LOT of icing for a cupcake. Would have love to see smaller flowers and what they look like. This size looks good for a cake.

I hear this a lot and i thought i would advise you and others.It is not necessary that you eat all the icing. The icing is as much there for decorating purposes as it is for eating. It's your cake so you choose whether to eat or not but I advise you not to. Just scrape off what you don't want😉

Momshie Gracia you need a stiff frosting in order for the piping tips to work so meringue *might* work. I think it’d be a matter of playing around and seeing what works
Hi Annushko. Yes it will definitely work, I find with a hand mixer I just have to mix it for a little longer until it has gone really creamy. Also once the buttercream has been mixed you could use a spatula to smooth the buttercream a little more against the side of the bowl which sometimes helps with it being less gritty.

Great video! I would just recomend making the flowers a bit shorter to make them look more real, and use less icing , but great video, very helpful!

Beat it LONGER...especially in the butter stage...and make it "slightly" thinner. It's a fine line for correct consistancy. Beat it, beat it, beat it.

iv seen a lot of chefs using Italian Buttercreams , if doing tulips in two tones it really comes out sharp
It just seems like way too much icing but it's cute.

You need a frosting that holds it own. Stiffer is better
Not stiff enough but don't take anyone's word for it. Try it yourself
