To Make Croquets (The Virginia Housewife, Mary Randolph, 1824) 3 Chicken breasts, chopped & pounded fine until it resembles ground meat A few pieces of ham or bacon, chopped fine as above. Use more or less depending on your taste preferences 1 cup of bread crumbs + 2 cups for the breading 0.5 teaspoons of nutmeg 1 tablespoon of mustard 1 tablespoon of mushroom catsup OR worcestershire sauce 2 tablespoons of softened butter Salt & pepper to taste 6 egg yolks, whisked Lard for frying Combine the ground chicken and pork with 1 cup of bread crumbs, nutmeg, mustard, catsup, butter, salt & pepper. Mix up well till blended. Take a small chunk of the chicken mixture and roll it in egg yolks and bread crumbs, flattening it a bit in the bread crumbs. Fry in hot lard until golden on each side. These do not take long to cook so watch them closely.

This past weekend we lost power for about 9 hours. At the time of power loss, I was making bread dough and yogurt. I didn’t want to throw them out so after hubs got a fire started in the fireplace, I went to work. I took the yogurt out of my instant pot and put it near the fireplace to continue fermenting. I did the same with the dough. During its last rise, I put my Dutch oven into some of the coals to heat up, then put my dough in it to bake just like you do, Justine! Both turned out perfectly!
Being in Texas during 2 back to back arctic freezes makes me especially thankful for how people had to live without running water! We need to toughen up and soon. 🙌🏻🙏🏼❤
Mmm. Growing up, my mom made salmon patties with creamed potatoes (to cover the patties) and peas to put on top of that. I do without the peas, but, salmon patties with creamed potatoes all over it, yum. I've made this at times for my family too.
Now that we are experiencing a cold winter, Justine's recipes are so wonderful to have on a cold and dreary day. They will not only warm you up but they are such good " comfort foods". 😋

Happy to see the mushroom catsup is back in rotation. I have made 3 batches so far, and dried out the solids to make a mushroom powder. So yummy, I am never going to buy worcestershire sauce again.

Gosh im early I love this channel so much, I just wonder if maybe there are any swedish recipes that you could try because of the mass immigration of the 1800s. Swedish people came to America and I dont know super much about it. I have a relative who made some books about this but im just wondering if they brought any kind of recipes that are used in America even today that would be interesting to see. Like saffron buns, blood pudding, aspic and so on. Just a thought but I love you guys❤️

You should write your own cookbook with Ron as your food photographer. Do your favorite recipes from all the famous people of your favorite time, but do it in today's cooking devices, time, temp & measurements on one page and then have the original on the opposite page. Of course if it's a small recipe you could just show an insert of a picture of the original recipe like you do when you show it in here. Girl, I've got all kinds of ideas. I would definitely buy your cookbook if it taught me how to do it in/on my conventional stove. I think you could do several series too. You've got all the footage in your past videos to do it in no time at all. Just saying, I think it could help with your household expenses and help get your house finished faster. You should definitely think about it. Praying for you, Ron and the little one. Love y'all bunches! ♥️

I watch you putting those nuggets on the cloth towel to drain the grease and inside was saying, NOOOOOO. I realize there wasn't any paper towels, drat. But all I can think of is how hard it would be to get the grease out and how hard it was to do laundry two hundred years ago.

Ever since my Bride recovered from COVID she never got her taste back. Instead, she now has what I call "The taste-buds of a five-year-old). She loves chicken nuggets, french fries, whole-kernel corn and tacos. She had never eaten tacos before, but now insists on "Taco Tuesday" I have a 79 year-old toddler on my hands......................
I'm so curious what cleanup looks like after some of these meals! Like what was done to discard leftover lard from frying, caring for cast iron items and cooking utensils, etc...
In German we call the dish “Geflügelfrikadelle”. Or Boulette or Fleischküchle. Depending on the area you live in. Geflügel means poultry. Frikadelle and the other dialect words is meatball in English.
I'm just curious. What do you wash your towls in after draining fried food on them? They never look grease stained so I'm wondering if you have a special laundry secret for removing oil.
