Matt isn't a "formal" chef he just cooks at home almost every night. He has said that he is a home cook, not a formally trained chef. He has never said that he worked as a chef either, he is a business consultant. I think you misunderstood what they have said in the past.

Spoiling the ending means not everyone is going to watch the video and it takes away from revenue from your favorite TH-cam channels. The orange color of the rice comes from “Sofrito” which is a blend of peppers, onions, seasonings. You mix that into the water before you add the rice

I... i am sure a lot of people use tomato too... But rice is fried before, and then you blend tomatoes with other seasonings and that liquid goes to the rice, and has to evaporate completely...
