Are you kidding me?! I consider you as one of the best zed players on TH-cam and possibly even on rift aswell! And that's coming from a zed main who had to go on hiatus for awhile and once I returned I felt my zed was not as good as it once was, so I looked up gameplays and found yours and you gave me my confidence back aswell as improved my playstyle aswell. Besides imo Zed isn't as skill based as other champs, once he gets to mid/late game he's unstoppable, ofc that's my opinion, I don't even bother going hard with him nowadays with the crazy combos and 200 iq outplays, I just stick with the basics and hope I did enough that my team can actually win(rarely happens lol)

What's your take on collector? I often use it just because it feels strong but idk
It is strong. I'd take it 3rd item after yommus and black cleaver but I needed the anti heal so I didn't build it this game. Big fan of Collector though!
How many matches do you have with Zed and Kata? I have about one hundred with Zed and a few dozen with Kata and I still suck with both of them, lol.

When should you not choose zed?
When enemies are tanky with CC like nautilus. Zed feast on squishy line up.

I don't pick him against bruiser/tanky comps similar to Katarina. They're both assassins therefore tanks will only give you a hard time. Zed can pretty much go toe to toe with most mid laners but I'd avoid Panth, Garen, Malphite (tank)
