For example, if loading new files every day, and the pipeline is triggered daily, can the copy data activity also write the processing date to each row of each destination table so you can see in the different destination tables what data was added on what date?

Yes you can which is simple to achieve
What will your approach be if your csv do not have headernames?
do not declare the 1st row as header.
