You can cook nettles like you cook spinach - they are extremely healthy. I believe they are not native to the Americas and were probably brought over by Europeans to supplement their diet.
Have you looked into the master gardener program at your local extension office. My wife did it and our garden is so much more successful after it. And she can identify just about anything in our yard

Great video. Having grown up and foraged in the east I can tell you from experience good forage is a lot harder to come by in the Rockies.
