my mother made them pretty much exactly like this except for her beans were never broken apart. They always remained beautiful and whole with no broken skins , just perfectly cooked , plump whole beans. I've heard that this depends on when you add the salt
My people came from Kentucky to Illinois where some of the wagons broke down and horses needed shod (sp)in Windsor IL. And a huge winter storm held them there all winter and ended staying and was where I grew up…and ate plenty of those delicious soup beans y’all got there and corn bread…it’s still one of my favorites!😊

Very helpful. I was looking for ham hocks but none in our neighborhood, so great to see the bacon being used. I love carrots, so I may add some to the soup and I like cabbage too. I like vegetables. Thanks for showing us. I just look for any package of beans and I didn't have a name for it other than bean soup.
I'm originally from michigan, my mom made bean soup (thats what we call it) using great northern beans and a ham bone or smoked pork hock and also added onion, salt and pepper in a large kettle on the stove. She made biscuits or homemade bread to go with it. I remember it tasting even better the next day. She would make baked beans from leftovers and let me tell you, best ever 😋
My granny was from Morehead Ky and she made these soup beans, cornbread and homemade fried chicken with a plate of salted tomato slices (every meal!). I was one lucky Florida girl to be brought up in her presence ❤
Portuguese Bean soup is similar. We use red beans and smoked ham hock. Please look up the Punahou School bean soup recipe. You could also add some cabbage to yours to change it a bit. Looks good.
The cook times vary between Pintos and GN beans. I've always found that the GNs cook way too much when combined with Pintos. But the taste is fabulous. I've read to not put the salt in at the start but wait til they're pretty well done. I don't know if this causes any problems with the texture of the beans. Soup beans, raw onion, and cornbread (yellow for me) is a meal in itself. No sides needed.

My sister still lives in Morehead Ky and most of my ancestors are from all over Eastern Kentucky. My sister collects recipes the older people used.
