Was very happy to come across this particular style! There's something peaceful about this method of yam Porridge (ASARO) that appeals to me a lot! Others may say the usual paparazzi is missing here: (pieces of fish, leafy veggies & other kinds of veggies, pomo, turkey and even palm oil!!) but for some reason, this is an easy style to love, appealing to the eyes especially on days when you don't have energy for 'extra paraphernalia' lol! I would welcome some blended crayfish though, and as a substitute for sugar, I would include abit of sweet potatoes for sweetness (I feel you sister, some yams can actually taste bland!) This is also a perfect way to help younger children to begin to appreciate ''ASARO''. 😋 Well-done Janet, Good stuff !!!
How can you add sugar to your food. As a caterer you should know that yam itself is sugar. Too much consumption of sugar is bad. Moreso, Poradge does not need too much ingredients.
Regina Ocansey Hi, you cut them to whatever size that you prefer but not too thin. Put them in ice cold water as they are being cut. Line a tray with parchment paper if you have it. Then place the yam slices on the tray. Do NOT stack them one on top without the paper in between. Freeze immediately. Remove when frozen and put in a ziplock bag and store back in the freezer. To cook boil water till hot and add the slices to the water with salt and it should taste like new. Good luck.
