Im a firm believer that you can do whatever you want with any dish or food. After people who use the phrase “do better” or “educate yourself” Food purest are the most annoying people.
My tip after living in Korea for 12 years is not to chop your kimchi on a wooden chopping board. That will stain the hell out of the board and the smell will remain. Put it in a bowl and chop it with kitchen scissors. That's the way they do it here.

I love traditional carbonara using eggs in the sauce, but the issue I always run into is that if I bundle up leftovers to reheat later in the microwave, the egg in the sauce cooks and becomes scrambled eggs basically. Is there a trick to re-heating carbonara to eat as leftovers?
Taifu smoked tofu has a similar smoky/sweet/saltiness that you get from pork and crisps up nicely. Can be hard to find though- note that Tofoo smoked tofu won't have the same effect!

@@danilincks5809 Kimchi tastes hot and sour, depending on how long it has matured, it becomes more and more sour.

@@danilincks5809 after it ages it is pretty vile stuff. It is very spicy and very funky tasting but in small amounts quite delicious in my opinion!

Maybe adding a tiny bit of water to it before putting it in the microwave could stop it from scrambling??
I reheat it by adding it to a bowl over boiling water 😅
