I notice you use a lot of corn starch. You might take note that the enzimes in saliva can break down cornstarch. This is important to know, because if you are a person who likes to taste the batter or sause it could be a problem when you are using cornstarch. BTW, I have made cassata cakes and have never used cornstarch.

Yes Way too much corn starch! Also there was no tempering of the egg yolks. He did say it was his first time.
