      First let me clear the meaning of 'Gongura Pachadi' for my viewers.
      It's one of the tangy traditional side dish prepared in Andhra and Telangana from Red Sorrel leaves(Roselle).
      Now coming to the query
      1) Take only mature leaves of Roselle
      2) Ensure proper washing and drying of these before making chutney
      3) Store it in air tight container
      It's shelf life will be around one Month if kept outside /room temperature.if refrigerated in air tight container then Gongura Pachadi's shelf life may extend upto 6Months.

      Thanks for sharing your query.
      As I don't have direct hands on experience in this field so it took me time to respondback. Sodium benzoate is an antimicrobial ( effective against bacteria and mould) and one of the internationally approved food preservatives added to many foods to prevent their spoilage.
      Its concentration in food is required to be between 0.1%-0.2% (w/w). More than this can affect the taste of the preserved food item. You can add about 1 gm of it while making one Kg of Ladoo.
      But as it's an eatable food material ( ladoo) and also keeping in mind the food standards and safety rules
      My suggestion is to enquire about it from people who are into this field.

      You can try adding one tea spoon of common salt and one tea spoon of ghee/cooking oil for making wheat flour dough. Then make chapaties, let them cool down for sometime (roughly 10 mins) and then put in a zip lock plastic bag and keep that bag in the freezer of the refrigerator. This will help you to store and keep chapaties eatable for up to two weeks🙂🌿

      If you are planning to make Idli Batter on commercial scale and looking for tips for extending shelf life of home made Idli batter up to three months you have to take advise /suggestion from people who are into commercial production of it. I don't have hands on experience in this field.
      I can only share some practical tips of extending its shelf life up to a few weeks:
      1. Store idli batter in freezer immediately after grinding
      2. Add dried curry leaves/ powder to idli batter before storing in refrigerator
      3. By adding salt (a pinch ), you can extend the shelf life of the idlis.
      4. Addition of preservatives like a combination of Nisin(7.5ppm) + Potassium Sorbate (2000ppm) is also suggested by a few of the idli batter makers to increase the shelf life of batter (But I have not tried it)

    Assalam Alaikum I am from pakistan and my business is chili powder in august september fungus and worm is used for this which chemical is used to keep chili powder safe

      Kindly ensure that red chillies are properly sun dried. Then chilly powder should be stored in the air tight containers (preferably glass jar) it will reduce fungal spoilage to a large extent. In addition to it you can put solid rock salt 100gm and 1table spoon of common salt to increase shelf life if chilly powder upto 1,year.
