Ms. Chris, you gotta try the Red and White supermarket in Dortches, NC (just north of Rocky Mount on I95). They have the old fashioned cracklings without the skin attached. I get some every time I go home to NC. I try not to eat them all before I get to make the cornbread. 😋

Have had cracklin' bread all my life. I too have a skillet that is older than me (I'm 56) I made sure to take it when we packed my parents house up. It's cast iron no handle anymore and the center of it is smoother than a babies bottom, down to its silver iron (nothing sticks in it). In my mind it makes the best cornbread!!

Mom always made Cracklin bread with Sunday greens. Cracklin bread was better than Hot Water bread. I had a mother that cooked cornbread with a lot of her wonderful dishes. She was a scratch cooker just like you. Be safe, Be well.

chriscook4u2-Lordy mercy! Yes, I have eaten cracklin' cornbread a many a time, Chris! Especially down in the Fall and in the Winter time. My Mother would cook a pot of some sort of dried beans, have a pot of rutabegas, fried streak-o-lean meat, and a pone of cracklin' cornbread for our supper. Of course there was always an onion cut and home-canned pepper sauce on the table as well. Talk about some good eating, but it was! Good memories! And we always had milk to drink. :-) I was raised in the southeast. As for a skillet, my Mother always had a dedicated iron skillet just for her cornbread. She said if that skillet was used for cooking other things it would cause the cornbread to start sticking. I do the same thing with my dedicated iron skillet-I only cook my cornbread in it. My cornbread will turn out onto a plate beautifully and my crust never sticks. Old timey cooks teach us a lot, don't they, Chris?

My Mom made her cracklin’ from scratch. She baked a whole rind in the oven.
