Is it beneficial to sightread one hand at a time?
Because the definition of sight reading is only reading at the one time, no. However, it is beneficial to practice pieces that you are learning hands separately. I talk a lot more about it in my free sight reading workshop. Have you watched it already? If not, here’s the link:
