I don't know how to explain it, but I LOVE that you two are so aligned on what styles you like and the techniques that work for you. It really feels like you share a goal and a vision and you make it happen. Also, we have very different tastes, but I love that you are committed to the style you like and you're not just doing what's trendy right now. I don't love the wooden knobs, but they sure fit your aesthetic and they don't just look overly trendy. They look exactly like the vibe you were going for - an old cottage home that's warm and quaint and full of character. Sure, maybe some things won't look that great in 50 years, but who cares? You are the one who lives in the house and has to see it every day, you should have things how you like them.
I really love the thin brick, and the combination of the texture of the brick with the board and batten trim is so appealing! I wish I had some skills tho!
I'd use a combo of double sided flooring tape and construction adhesive to hold the bricks. The flooring tapes holds right away and the adhesive holds over time. The mortar in between the bricks holds quite a bit as well. Then you could avoid mortar or using screws to support the adhesive.
