      @@fluffyflareon4152 You want to look for Lao Gan Ma chili crisp - there's a picture of a Chinese auntie on it. That brand also has a ton of varieties, so you could get chili crisp with peanuts, with black beans, with cabbage.. make sure you're getting Spicy Chili Crisp if you want the original stuff

    tip for measuring out peanut butter and other viscuous stuff in spoons: lightly oil the spoon first. the pb will slide right out, no scraping needed! easier to clean too.

      @@cate01a Noodle water is just starchy water which can be great for some pasta dishes. In this case it's not necessary to use but is convenient and already hot. Nothing gross about it.

    First time seeing your channel. I wanted to cook Peanut Noodles and picked yours because of your channel name. I had all ingredients luckily. It was so quick to make and delicious. Wife said, “this goes in the rotation”. The flavor stayed in my mouth for about 45 minutes after finishing eating. That rarely happens and I don’t know if that’s good or bad. Subscribed and I’ll be looking for other dishes to make.

      It's better than a spoon, but you might want to try a knife. I think you'll find a knife has all the advantages of a fork, but can also go all the way in without making a mess. Also easier to clean off than a fork when you're done.

      You can try using sesame sauce as a replacement if you are not allergic to that. It is actually more authentic in Chinese cuisine to use sesame sauce than to use peanut butter.

      @@doug539 you need to check the ingredient list on the sesame butter, it is usually a mixture of sesame and peanut, e.g. 7:3. It is not that easy to find an Asian mart that stock pure sesame butter.

    Chili crisp is definitely an obsession! I think some julienned cucumber is also a great addition to dishes like this; it adds a little freshness and lightness to an otherwise pretty heavy bowl of nutty noodles.

      Yeah, I've made it with gochujang in the past. I've used it with natural/ low sugar peanut butter because the gochujang can be quite sweet.

    Honestly can confirm these are an addiction.
    My recipe is thus:
    2-3 gloves of garlic pressed through a press
    Grate in ginger
    Pour in 1.5 tablespoon each of soysauce and rice vinegar, let the vinegar kinda mellow out the ginger and garlic
    1 teaspoon each of brown sugar and MSG
    1 table spoon each sesame seed oil, chili crisp, and hoison sauce
    Whisk together, then add 3 tablespoons of peanut butter, let sit, then whisk again.
    Green onion and/or chives go great with it of course. I also like mine with soft boiled eggies

    Congrats on the 3 mil! Also I got your cookbook by accident. Picked it up at my local library and had it out to try out a few things. The hubs let the parrot out, he climbed up the cabinet drawers and ate the cover. Needless to say I bought it from the library and now I feel bad they have one less copy but glad because now I have mine!

    Instead of regular water, use noodle bath water to hydrate the peanut sauce. This is so the starch emulsifies it and makes it smoother

    I use a knife or a fork to stir new jars of tahini, and I STILL manage to slosh oil all over the place EVERY TIME. Also, I was already planning to make peanut noodles soon, so now there's no turning back.

    Ok this was BOMB. BUT added more of these: sesame oil (maybe like 1 teaspoon) more sugar (1/4 teaspoon)
    And then I added maple syrup (like literally around a tablespoon). Maple syrup made it super bomb 😋
    I also added by mistake about 1/4 additional teaspoon of Tamari (I used Tamari instead of soy sauce)

    I'm on low sodium, but I REALLY wanted to try this, so I (hold onto your hat) replaced soy sauce (960 mg per Tbl) with Worcestershire (65 mg per teasp). It was still good.

    I used to eat something like that often when I started college and was too lazy to cook. But I just made pasta, threw peanut butter and sambal on it, mixed it and ate it.

      this is fascinating, how would you say the texture of the cabbage turns out in the finished product? Just like, regular cabbage, or pickled cabbage, or like some sort of fancy cabbage from an international grocery, or what?

      @@MorteTheSkull Depends on how thin you slice, how long you cook it for and what kind of fat you use. I find using butter and cooking until it actually gets some browning turns out fairly noodle-like but with that slight cabbage crunch still (not mushy). Olive oil works fine but it doesn't quite get the same brown and the texture is a little softer. If my roommate wasn't allergic to coconut I'd try coconut oil to see how that pairs with the peanut sauce. I usually slice the cabbage thinner so there's a good sauce distribution but my husband likes it thicker so it keeps more cabbage crunch.

      There’s a similar dish called Qian Long cabbage which is basically blanched Napa cabbage in a peanut butter, sesame paste, sugar and vinegar dressing and it’s really good as well

    I made this properly once three years ago from some youtube video and it was amazing so I kept making it every few weeks, but I couldn't find the video and forgot the recipe over time so each time I made it I'd include one fewer ingredients, forgetting what I was missing. By the end it was noodles, peanut butter, soy sauce, and water, at which point I stopped making it in disgust at my foul creation. Sesame oil was the last to go I believe, it was really keeping the whole thing from becoming a horrible texture.

    Can confirm re: the chili crisp. If you go for the crisp with the "three ting" or "vegetarian" one with the peanuts, fermented kohlrabi, and tofu in it, it's even better.

    Peanut Butter Oil mixing hack: hand-held mixer with only mixing blade attached. Hold the jar of peanut butter firmly and do not let go until done. Set mixer to lowest speed. Insert into jar slowly. Turn off mixer before removing from jar to avoid making a mess.
