Bruce was only the name of the shark on-set. It has no canonical name. Same reason The Alien isn't referred to as a Xenomorph here- the creature actually has no official name and "Xenomorph" was just a term (meaning "strange form") used by a character in the second film that fans erroneously thought was an actual name. Likewise for the puppet from Saw, which is named Billy. But canonically, the puppet has no name and was just called that by the cast/crew as a nickname that stuck. Sometimes the lore doesn't have a real name. "The Shark" or "The Alien" or "Jigsaw" are all appropriate here, I think.
