Hey! Great question! Yes, I keep an eye on my temp and if I see it slightly dropping after a few hours, I’ll look inside at my coals. If I see it is getting low, I’ll start another chimney full of briquettes. I try to never throw briquettes in there unless they are pre-lit. You want that good burning heat. Not that dirty raw smoke it would produce by just dumping it straight in. Hope this helps!

I'm always cautious about touching everything after I've handled the meat. How do you keep the charcoal lasting that long do you add to it?
