For what I may have understood: each of the 12 channels has 6 aux sends, so if i work with 4 monitors in a 4 components band, everyone could have its own setup for what they want to listen?

er...you didn't cover adding FX to aux sends and the limitation of all FX goes out the master so FX return added to the monitor mix is the same as the main outs (limitation)
good point, but this is just a getting started video. question on that mix idea of 5&6. That's a stereo , not balanced. you'd need an adapter to use it like that. you'd have to have a trs male to ts. otherwise you'll ground out the right channel.

Press and hold the name at the bottom of the channel strip and a menu will come up offering the option to rename the channel

I'm having trouble setting up monitors. No matter what I do to the aux sends page monitor mix, nothing comes out of the headphones!

It is not powered, so you'd need an amp with passive speakers. However, I'd recommend powered speakers (QSC) for easy load-in and transport.
