    You don't have to throw the scoby away! Peel the layers off and setup a scoby hotel.

    if you ever forget to add sugar, you can heat up some water separately mix sugar in that, and cool it enough to incorporate it into your booch to make sure its all dissolved 👍

    Who hasn't left out the sugar when making 'booch? I make sure to measure my sugar and put it on the counter near the brewing tea so I can't forget it.

    At the end of your beer ferment you want to make sure you do not splash at all as beer oxidises from any splash. By filtering and pouring through a filter you've oxidizef your brew so it won't be great after a period of time.

      I cringed when I saw him splashing it. lol Definitely got some oxidation but at least he bottle conditioned and that can help get rid of any oxygen that was introduced.

    You may have figured this out by now, but add your honey/sugar before you cool down your tea and it will be super easy to dissolve.

      Just make sure you activate the yeast, meaning that it starts bubbling and becoming alive again. His booch definitely did not create more alcohol because his yeast was just sitting in water, unactivated.

    About the yeast - it'd also be fine just with those in your batch, especially the "strings" that look like alien tentacles. Just put under the airlock.
    At first they'll be a tiny bit worse than ale yeast, but if you add a bit of previous yeast to your new batch - it'll become awesome.
    I made my starter even for other brews that way, just from combucha yeast strings.)

    If you want a nice and round scoby use BROWN (dark) sugar. Not white

    Cool idea. I just started making kombucha and have thought about combining with some of my beer I make. After seeing this video Id say I like what you did with some tweaks. First off boiling the sugar is a needed move to kill off anything that could be in the sugar. How ever I would add the hops and your adjuncts to that hot mixture once its gotten down to 170 degrees. This will help pull out the hop flavors and aromas much better. Like the fact you just winged it bt my OCD was killing me watching you jut dump unknown amounts. Got to measure so you can repeat if you like it. Oh fyi That one you made could be around 6.5-7.2% abv with the amount of sugar you added to that what looked like 1 gallon of fluid.

    I wanna know if this ended up more like beer or a tart, or a cider. Personally, not a beer fan, but ciders or tarts I’m all in. If it just turns out like beer, then I’m wondering if I should try wine yeast instead

Some vessels are complete garbage BTW and if a creator has something that have worked for them not a bad ideato share. So don't throw that "lazy" garbage at me and look at your own self first.

    Good video man, really informative. You think if you used store bought hard kombucha to make a mother and then brewed kombucha from that, would it then have a high alcohol content? May have to give that a try. But this video is super helpful, definitely going to try this! Thanks man!

      The scoby/pellicle does make alcohol, it's the dry wine yeast that makes the alcohol. Creating a mother/scoby from hard booch probably would not do anything. Actually, the alcohol hurts the Scooby, which is why you make kombucha and then add wine yeast to it and don't just do it all at the same time. So no, making a mother from hard kombucha probably would not make it more alcoholic.

      @@S.S.250 Word, thanks for that explanation. I couldn't get a scoby from hard kombucha anyways, which makes sense from what you said. I'm have kombucha brewing now, gonna try to use some left over ale yeast to make hard kombucha.

      1. Nope, I believe I only used about half!
      2. Yes - total mush instantly. lol. I strained mine at around 7:30, but you can also use a bag to contain your flavorants too.

      Check to see if you have any home brewing stores in your area. Its a great place to ask questions and find really good ingredients and gear. If not you can find all you need online (amazon is a good place).

    Hi! This was a cool vid! I'm trying to brew my own alcoholic kombucha too now, but I don't have that second fermentation bottle that you have with that kind of lid. Do you know what a good alternative would be?/Or is something like that absolutely necessary. I just have large mason jars.

      You can get one on Amazon with the airlock fairly cheap like 15 bucks or so. It's called a carboy.

      With all of the random natural yeasts that already exist in Kombucha, there really isn't a reason to sterilize. Adding yeast like he did is really just tipping the ratios in your favor slightly.

    I just commented about the problem with his yeast activation, but I realized I didn't emphasize enough about how wrong this video is, so I'm posting again. Literally, the most important part of producing higher alcohol kombucha is introducing more yeast into the brew. When you order the yeast online, it is dormant in the package. You must reactivate it according to the directions on the package. You will know it has activated once it is bubbling and created a slushy-like substance. Sometimes it takes 15 minutes, and sometimes it takes 24 hours. Other times, the package of yeast is a dud and will not work. Doing it like he does in the video will not create more alcohol. Sure, it might become hoppier than normal (since he fermented with hops and lemongrass) but that does NOT mean that it has more alcohol than normal kombucha. The dormant yeast will not create more alcohol. I'm not trying to poo-poo this video, because I actually do like his style and presentation. But it's not accurate when it comes to making higher alcohol content kombucha. Booch on!

      Appreciate the feedback. I mixed the yeast / water / sugar mixture more than I showed in the video, but I didn't let it sit longer than 10 minutes - I'll take your advice into account next time I make this!

      Jake Rogers it fucking works. You don't need to re-hydrate the yeast like you say.... I copied his instructions and got a seriously high volumed drink. It wasn't pleasant, but easily 10% plus.

      Yeah literally every video about making alcohol at home says that you don’t need to “activate” the yeast like you think. You’re preaching a myth.

      Not true at all. Sure, rehydrating the yeast and making a "yeast starter" can produce happier, healthier yeast. But that only helps in speeding up fermentation. I use US-05 yeast that he used in this video for commercial beer brewing and it produces the same amount of alcohol then when harvested and used as a slurry, just takes a day or two longer. Making the yeast starter just increasing your chance of contamination and an infected beverage.
