It's Riley's Sense of Self, basically, it's where Joy and Sadness go down in an elevator and there's this pool of memories with giant strings in between.
I noticed a detail in the first movie, when sadness touched the core memory, yellow to blue i feel like it actually represented that riley was recalling memories of the past and was feeling sad so the happy memories turned into sad because she missed those moments.
