      Carbonating changes their PH to be more acidic and leaves things with a slightly bitter taste. So if you're carbonating things that are already acidic and bitter... Now you know why Sodas have so much dang sugar in them. Basically all your drinks are going to need some amount of sweetness to balance them, whether that comes from Simple Syrup or other. This demands a redo!

      Some coffee roasters use nitrogen to carbonate cold brews. It makes it smoother and almost creamy. Kinda like beer.

      @thatunicorn yea nitrogen has smaller bubbles so it feels smoother. Also I don't think it affects the PH

      @Kanthalas yeah that wouldn't effect pH so much. But nitrogenate a cup of cold brew with some decent cream and vodka. I am pretty sure it'd be smooth.

    When you make cucumber pickles at home with lactic acid fermentation, the pickles sometimes come out naturally carbonated if you leave them in a jar long enough.

      Lacto fermented pickles are the best pickles, especially if you do the short ferment ones, crispy and garlicky

      Can confirm. Almost inevitable with kimchi depending on your ferment length. I know people that love it when it gets a little "fizzy", but it's not for me.

    Carbonated dairy is not entirely unheard of. In Persian culture we drink a beverage called doogh (non-alcoholic for the record!) which is basically yogurt soda. Can have mint optionally added to it. I'm a fan!

    As an idea for future episodes, perhaps you could do episodes explaining the history, function and preferred drinks of all the unique types of glasses that exist in bar culture? What's the difference between a coop and a wine glass? A Jack & Jill to a Collins? Maybe even showcase some unique glasses that don't often see time on the bar?

    You should carbonate a Last Word. We add carbonated water from our soda stream to our Last Words and it makes them so great; a wonderful poolside sipper!
    The CO2 seems to make the items bitter, and a LW is already semi-bitter. Just a thought.

    This reminds me of when I worked fast food. On a slow day, the guys decided to start throwing things into the fryer to see what would happen. Mixed results, although we did get a decent donut after adding sugar to a deep fried bun.
    Things definitely fried: hot dog, pickle spear, sauerkraut, hot dog bun, tomato, and redid a French fry. Not sure if they did the chili. Pretty sure I missed something.

      @@Demon_Slayer213 the flavor got really weird, like it turned the milk instantly “off” - you know that taste when you’ve got maybe one more day left before you need to throw it out, and even then you’d only use it on cereal? Carbonating put the milk right in that neighborhood.

      Yeah your basically insta curdling milk, the carbonation process produces an acid and if you've ever added vinegar straight to milk you know exactly what that does

      Yogurt, on the other hand, doesn't have the curdling issue (for obvious "it already did" reasons) - lassi soda can be quite a pleasant thing. You do want to do some of the thinning of the yogurt with water in stages, otherwise the viscosity is too different to mix well, and you want it quite a bit thinner than most normal lassi you'd get in the states.

    I can think of a few places out here in Chicago that feature some kind of carbonated pickle juice and gin cocktail. They're great! They scratch that bloody Mary itch without weighing you down and/or giving you heartburn.

    Ive carbonated cold brew coffee before, diluted with a little plain bubbly water and topped with a splash of creamer its actually the perfect way to caffeinate when its too hot for regular coffee. It does foam up when carbonated, so make sure theres plenty of head room in the bottle and give it a minute to settle between pulses. Now im wondering if u could do a sort of bubbly cold irish coffee this way....

    I have a story related to carbonating things that should not be carbonated. I once went on a road trip and bought a bunch of food supplies for the trip. I got some frozen stuff and some refrigerated stuff, put them in a cooler and put some dry ice over the stuff that was to be frozen. Among the frozen stuff was a couple of pies. By the time I got to the pies, the dry ice had sublimated quite a bit, and as we all know, dry ice is just solid carbon dioxide. It turns out that those pies weren't terribly well sealed, and the carbon dioxide had infused into the pies. I effectively managed to carbonate a chocolate pie and a key lime pie, and it was like pop rocks when they hit my tongue. It tasted extremely weird, especially the whipped cream bordering the pies.

    Traditional fermented pickles are usually naturally carbonated if you take them out too soon. I actually like mine that way.

    Well now I gotta try using a cream whipper and nitrous oxide to quickly make cold foam. Also, Meredith jokes about carbonated coffee, but I gotta say, my favorite summer coffee drink is a shot of espresso poured over soda water and ice with whatever flavored syrup I'm feeling. I think the carbonation opens up the palette to the more vegetal and "green" notes of a coffee. It allows me to brew the same coffee two days in a row and have a totally different flavor experience. 10/10 would recommend

    Had a friend years ago carbonate a bunch of grapes the old fashioned way, leaving them in a latched cooler with some dry ice. Heard they were tasty.

    Hey Greg! I've been a fan of your channel for a while now, and there's one thing I've always wanted to see you do! Try to make cocktails using weird sodas as the main flavor profile/main mixer, and trying to work around the flavor. Some suggestions would e ranch soda, corn soda, for the most part, just a lot of the flavors from Lester's Fixin's brand, ut there is one in particular I've wanted to see someone make taste at least decent, and that's Moxie Soda. It's got a sort of rootbeer, black licorice, cola flavor, with a horribly bitter aftertaste.

      I agree, this'd be a very interesting epsidoe. I have tried their Bacon, Ranch, and Chocolate sodas and all were pretty bad, but crafting a drink to complement it and make it actually desirable would be an interesting challenge.

      I believe he has an episode featuring Moxie already, or at least featuring gentian root, the main flavouring in Moxie. Its how I first hears about it. It was quite nice. I thinking it was an episode about fallout, but I could be being mislead by the 50's aesthetic.

    I read a blog about carbonating fruit long long ago. You need more time, they used a large pressure vessel, I think part of their old reverse osmosis water setup, put dry ice in with it and left it in the fridge for 24 hours. It also offgasses fast, so you need to eat the fruit quickly for the full effect.

    I remember watching Ashens make carbonated milk many years ago. Since then I have gotten my own soda stream & have been tempted many a time to try making carbonated milk.
    After watching your reaction to it the temptation is still there, but more as a sense of morbid curiosity as to *how* bad it tastes.

    when you carbonate things, the carbon dioxide turns into carbonic acid in the liquid you're carbonating, when you do that in milk imagine what happens when you mix other acids like vinegar into milk. it just curdles.

    As you said, the carbonation bring CO2 which is mildly acidic. The only way milk acidic naturally is when it is "passed". Therefore, when you drink fizzy drink, you register the taste as passed milk, which is why it tastes so weird.

    I've seen a video where a couple guys just force the nozzle into the meat of a watermelon and successfully carbonate the water inside the melon, turning it into a big fizzy goopy mass inside a rind

    In East Asia carbonated milk soda is a thing, they have something called Calpis/Calpico in Japan, and Milkis from Korea. And ngl I think it's good.

    I’ve had and enjoyed white grapes that were carbonated by putting them into a cooler for a few hours with a block of dry ice. Maybe not one to try with small children nearby, though.

    There's a Canadian pickle company called Tymek's. I've only ever really found them in downtown Toronto. They're jarred before they're fermented, so all of the carbon dioxide they produce while they ferment gets sequestered back into the brine, like champagne. When you first open the jar, the pickles are fizzy. I live for the first pickle out of a jar of Tymek's.

    Carbonated milk drinks are popular in East Asia. Lotte Milkis (a Korean brand, I think) is the most popular brand. Don't know how they keep it from curdling. I've even seen recipes for Milkis cocktails (with gin, vodka, or soju).

    The drinkmate is a great recommendation. I only carbonate water, but it's way better than storebought seltzer. Just use very cold water and give it a good shake.

    Once I was in this fancy bar in Czech Republic, where I ordered bloody mary and they offered a special signature one. I was like okay, go ahead. What I didn't expect was carbonated bloody mary, which was surprisignly awesome. It takes out the heaviness of the drink, make it feel lighter, and carbonated tomato juice is quite... surprising I have to say. In good meaning! One of the best twists I ever had.

    If you found the drink menu from the pepper mill in Las Vegas I’m sure you’d find some real interesting drinks. I was there a few weeks ago and had a Smith n Wesson that was essentially a White Russian + Pepsi. Super weird stuff that appeals to the crowd there I suppose

    I haven't watched thru this yet, Greg. Have to say, I've been lurking and enjoying HTD for some time now. A video suggestion for sometime over summer... we have decided we're doing an "Aloha to Summer" Luau for Labor day (inspired by Tasting History's recent Kalua Pork video).     I'd love to see you come back to this with more traditionally sweet drinks. I think one big thing that carbonated anything usually has going for it is sugar to offset the bitterness of the carbon acidity. You kinda got that with the black russian a bit, I think maybe sweeter drinks might play nicer with the concept as a whole to keep the flavor profile in balance? Thinking of it that way, you might actually need to over-sweeten slightly to compensate, but you could always stir in a little simple at the end for that.

    At this channel's recommendation, I got a Drinkmate about 2 years ago. I didn't have anything else at the time to test it on so I carbonated iced tea and milk.
    I'm glad I'm not the only one who ever tried this! I thought it tasted like vinegar. Not a great taste but it definitely had me laughing.

    I accidentally stored fresh fruit next to some dry ice on a camping trip once. It carbonated grapes and strawberries. They were good.

    science! When you carbonate milk, the reaction that hits your stomach and tongue is "this milk is expired". the carbonic acid is what signals our tastebuds to say that is sour milk. that is the recipe for instant sour milk, good job

    You've gotta carbonate slightly-too-sweet drinks, if you want them to be delicious. Some sweet-and-funky Jamaican rum drinks or too-sweet margaritas might be amazing.
    Edit: ever drunk a flat Coke? Like that much sweeter than you'd otherwise want to drink.

    Not sure what carbonated milk would be like, but the lranians (and other central Asians) have a drink called doogh/dukh or ayran, which is salted yoghurt and soda water, sometimes garnished with mint. It is lovely made fresh, but you can get it commercially bottled like soda pop. It's got the sourness and curdled texture of yoghurt, the tartness of carbonation, and the mint of mint. It is goddamned awesome.

    Carbonated daiquiri is pretty nice I think. Do half and half lemon/lime. I call it a Sprite daiquiri when I make it

    Saw this episode. Got a DrinkMate. I've been looking for something that can carbonate powdered drinks (i.e. energy drink powders) for a while without foaming and exploding everywhere. The DrinkMate works perfectly for this.

    Lots of these cocktails that you carbonated might actually work much better with Nitrogen, much like nitro cold brew or Guinness! Nitrogen is intert so it won't taste like anything and won't be as gassy for those spirit-forward cocktails.

    I vacuum fermented cocktail tomatoes once and up them in the fridge at the right time....crunchy, bubbly, weird, lovely. An experience for sure. Perhaps for a bloody mary.

I've just ordered a similar product (also claims to carbonate anything) and I promised myself I would wait at least until the warrantee is up before I carbonate weird shit because my SodaStream was never the same after trying to carbonate half-and-half but now you got me thinking about what I need to try.
