It's simple, go to the Inspector by pressing f11 and locate the dummy, if you are talking about the animations as they are not clickable and you are having difficulty locating just click on some car that you have added that will select the vehicle in the inspector if you observe the dummy in the inspector's list below or above the vehicle, so just press del or click on the eye that will make it invisible

For playable gameplay I recommend 16gb of ram, ryzen 3 3200g (or similar performance) and SSD for storage. not following the site's minimum recommendations, the game will become unplayable
