    Another beautiful video. Shiroya Ginza-tei obviously has great teppanyaki skills--management of temperatures and crusting superb. Was that uni in the corn dish? I'm not sure about the fish course. My mouth was watering when I saw the eggplant being grilled, and the tachiuo looked great. But wait--is that foie gras part of the same dish? And the thick, dark sauce? And they top it with a salad? Tachiuo is bland compared to the ingredients that were being added to it; this looks like the Japanese equivalent of those late Belle Epoque French dishes that use sole as simply a neutral base for wild and Baroque extravagances, when sole is probably best prepared simply, meuniere, grilled or poached. Also I can't help but notice that garlic chips are believed to be a good condiment to the very best wagyu. I don't understand this myself, to me they are more something you see in Southeast Asian food, for my taste an unwanted accompaniment to noodles, with poor texture and inferior in flavor to raw, sauteed, roasted, or even powdered garlic. I grant that maybe, contrasted to the buttery beef, maybe. . .The quality of the fruit dessert seemed outstanding. When I finally understood what was going on, the sukiyaki-like dish seemed lovely--how appropriate to serve Awaji onions with Kobe beef. Actually I never knew there was such an onion, and my husband's family is from Kansai. . .
