My Aunt and Uncle ran a concession at our State Fair of Texas back in the 1960's. I witness how much work was involved in our they worked day and night for 2 weeks (in the 1960's)the fair ran. I can only imagine how challenging a Fish and Chips shop might be for anyone thinking about this business.
i googled how do fish and chip shops make their chips and it broght me here - just peeled a bag of potatoes and chiped them now i never want to do it again lol :P
the fish shops in my area serve vile chips yet they still do well, the only chips I like are my homemade chunky chips, cooked to perfection if I'm going to indulge in chips I want them to taste great.
I wish I knew your shop because most of the shops near me cut corners.
