As for the veggies from the braising liquid, I just discarded them after the braise was done. They could be saved for something, but I didn't have an immediate use for 'em this time. I made 4 shanks as shown in the video and they came out amazing!! It's the best thing I've ever done with venison. I can't believe I've been grinding shanks or discarding them all these years. This is a game changer for me. It makes me wonder if a similar thing could be done with the neck or ribs.
This looks delicious. I have 4 shanks that have been in the freezer for two years. I’m going to try smoking them for a couple hours first then braise them and see what happens. I’ll also try to make a bourbon cream sauce. People don’t understand that you can make any cut of (almost) any animal taste delicious if you prepare it the right way. A lot of wild game eaters only have experience with steak, roasts, or ground meat because they are either too scared to fail or simply don’t know how. Btw, adding deeply caramelized onions and roasted garlic into your mashed potatoes will CHANGE YOUR LIFE!
Thanks for the comment. Smoking the shanks for awhile before braising sounds like an excellent idea (as does caramelized onions and garlic in mashed potatoes!)
Just getting over sinus infection, heading out tomorrow to try to fill tags. Question... Ever tell a woman she had nice shanks? What was the outcome? Gonna try this recipe if I'm successful. ✌️

I have been stealing shanks from my hunting buddies for years - their loss my gain. Now a moose shank is just as delicious and will feed a family - just think a grown man’s calf roast

Venison shanks and shoulders are my go to for slow roasts, blackstrap for steak style cooking.
