For the customization room you need to do nothing but redecorate your room with items and play with lots of items so don't cook that often if at all and don't really play any games

How do you get ones that aren’t chefs?

The Cooking room can be obtained by feeding your tama lots snacks and food or cooking a lot.
The performance room can be obtained by using the explore mode, playing games in the arcade and visiting the park frequently.
And lastly the customization room can be obtained by playing with items, trying on accessories and placing/Making furniture.
