Explaining Tsukimi for those not familiar with the culture. It's the same date as China's Mid-Autumn festival, and the general concept is relatively similar -- people celebrate harvest by viewing the moon and eating appropriate food. In Japan this traditionally means white rice dumplings, taro, sweet potato and other seasonal produce, but there is a twist on the concept -- raw egg (often just the egg yoke) on soba or udon noodles _look_ like the the moon floating on top, and so they're called Tsukimi udon/soba, and often served during the festival. This carbonara rice might be pushing it a bit too far, but it does have that egg to fit the occassion.

The heating of the liquid in a microwave actually heats up from the inside out the egg is submerged in the liquid so the heat actually doesn't cook the egg and it's in a low temperature

For gluten and dairy intolerance, you're probably good if you stick with more traditional foods - rice, fish, and miso will get you a long way. Modern Japanese foods use plenty of wheat and milk, though, and they don't usually let you customize orders at restaurants. For nut allergies, I'm not as familiar.
I have never been to japan, yet (tho I reallyyyy really want to visit as soon as possible), but I can say this with guaranteed surety, I LOVE japan, for literally everything they do. The plastic separator between the gravy and rice made me almost cry with joy.
They definitely were not frozen eggs, I've tried freezing whole egg and when they thaw the yolk is thicken and stiff, not like what was in the video. I think the higher fat and low water content of egg yolk might just take longer to cook in a microwave, and it looks like the dish contained a sous vide egg (the white was barely cooked and cloudy, and the yolk uncooked).
It looks like my version of white rice, sunny side up and a bit of mayo. Not to forget to add a bit of sweetness with banana slices. Yes, you heard right! You mix all the ingredients together except, you first mix the sticky white rice with the mayo, and then add the egg on top and the banana slices around the bowl. Pop the yolk and you’ll be surprised how delicious it is 😋❤

It's probably the bowl design, the lid, cooking instructions, Japanese microwaves, and a slew of other things.
Most of the water in an egg are in the whites so a microwave won't cook an egg yolk efficiently at all.

... thats not how frozen eggs work. if you freeze eggs the yolk becomes a permanent gel
