    Savory Shrimp and Grits
    For the Grits:
    • 1 cup stone-ground grits
    • 4 cups water (or chicken stock for extra flavor)
    • 2 tbsp unsalted butter
    • Salt and pepper, to taste
    For the Shrimp:
    1 lb large shrimp, peeled and deveined
    1 tbsp Cajun or Creole seasoning
    2 tbsp olive oil or butter
    1 small onion, finely chopped
    1 bell pepper (red or green), finely chopped
    2 cloves garlic, minced
    1/2 cup chicken stock
    1/4 cup heavy cream
    2 tbsp Worcestershire sauce
    1 tsp smoked paprika
    1/4 tsp cayenne pepper (optional, for extra heat)
    2 green onions, sliced (for garnish)
    Fresh parsley, chopped (for garnish)
    Step 1: Cook the Grits
    1. In a medium pot, bring water (or chicken stock) to a boil.
    2. Slowly stir in the grits and reduce the heat to low. Cover and cook, stirring occasionally, for 20-25 minutes, or until thick and creamy.
    3. Stir in the heavy cream, butter, and cheddar cheese (if using). Season with salt and pepper. Keep warm.
    Step 2: Prepare the Shrimp
    1. Season the shrimp with Cajun or Creole seasoning.
    2. Heat olive oil or butter in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
    Step 3: Make the Sauce
    1. In the same skillet, sauté the onion and bell pepper until softened, about 5 minutes. Add garlic and cook for 1 minute.
    2. Stir in the chicken stock, heavy cream, Worcestershire sauce, smoked paprika, and cayenne pepper. Simmer for 5-7 minutes until the sauce thickens slightly.
    3. Return the shrimp to the skillet and toss to coat in the sauce.
    Step 4: Serve
    1. Spoon the creamy grits onto a plate or bowl.
    2. Top with the shrimp and sauce.
    3. Garnish with sliced green onions and chopped parsley.
