I didn't chose Mystic because of popularity. I chose Mystic because I liked their description. And even though I hesitated between Mystic and Valor, I realized that all Jyms in my town are blue and Mystic would be a smarter choice. Whereas I was trying to think logically I realized that it is true Mystic's feature itself. Two days after that, all Jyms in my town were captured by team Instinct...Yellow domination still continues in my town...
I chose Mystic based on Articuno in the end. I was seriously considering Instinct, but then I remembered how excited and proud I was to catch Articuno in the game 6-8 years ago, and "Mystic" is a word that appeals to me in general.
I do like blue as well, but I also like red, and I was trying to be more strategic in my choice than "Hm, this ones blue and I like blue so there we go." Also my favorite Pokemon type is ice, so Articuno appeals to me that much more. I never really cared for electric types in general, no matter how cute they can be.. Fire types can be pretty epic, but still don't catch my eye in most games unless it's Torchic. I would always choose Torchic.

Considering you can't catch them in the game, it may be irrelevant as to why a team would be better or worse other than possible future versions that would allow you to perhaps catch the legendary of your team.
My reason for choosing Team Instinct was because at the time my PE class was focusing on flag football. There were three colors, red, blue, and yellow. I was on the yellow team. The red and blue teams bragged about how they were team Valor and Mystic, while we were just named Instinct then moved on. Nobody was hyped up on the yellow team, probably because of how unpopular Team Instinct was in the game. Because of that, when I finally got Pokemon Go a few years later, I was reminded of that memory and choose Instinct.

I chose Instinct cause I knew (or strongly felt) like it would be the least popular color. As the competitive person I was I knew I would be in an uphill battle and felt like it was more of a challenge and more satisfying to be on the 'underdog' team of the game.
Lets remember about the mascots of the teams. Articuno - Ice and flying Moltres - Fire and flying Zapdos - Electric and flying Ice type can freeze the foe, and is super effective against Flying types.
No, zapdos has a type advantage, since there are all flying types and flying is weak to electric, so technically zapdos is better unless you're are just saying that on opinion.
Now, Mystic has even more players than before thanks to the addition of team medallions that allow you to change teams for 1000 pokécoins. Since Mystic is the dominant team, people who initially chose Valor or Instinct will now change to Mystic because it's the most popular team and thus gives players in it an advantage over people in the other teams.

I chose Instinct cause I knew (or strongly felt) like it would be the least popular color. As the competitive person I was I knew I would be in an uphill battle and felt like it was more of a challenge and more satisfying to be on the 'underdog' team of the game.
