My guess is that it is the Norwegian pronunciation of a K as a voiceless alveolo-palatal fricative (i.e., "ch"), which is common practice (like how English people say Frederick rather than Friedrich). Given that Thorkell is Danish, his original name is actually "Torkild" (Eng., "tohr-keel"). Kudos to the Japanese actors, though, for getting the "T" right, and not use the voiceless dental non-sibilant fricative (TH, as in "thrall") like the English-speaking VO-actors do.
One of my favorite details in this show is the way the Japanese VAs pronounce names like Arnheid and Gardar in season two. They use a sort of "Z" sound to approximate the Eth (Ð, ð) rune from Old Norse, which is closer to the English "th" sound in there or weather.

If pronouncing using the standard version of Old Norse, "Þ" actually does make "th" sound when pronounced(It's also used in that way in modern Icelandic when pronouncing words like "Thor", if I am correct), they wouldn't have really made a mistake if they pronounced the name Þorkell more similarly to the modern day English way of pronunciation than modern day Norwegian(while not butchering that "r" and keeping it hard and rolling, of course. 😂).
