I didn't find anything concrete, I thought the game explains very little about it, if there is more information I didn't find it. I believe the chances of getting a better horse from a 5x4 stars breed are lower, but not impossible. But only with "normal" horses, if it's with fantasy, pegasus, unicorn horses, i think it might be a little different.

Eclipse is a horse from the golden keys time, i think the coat/horse has been removed from the game 😢
