    I have been using cast iron, and cooking potatoes, for many years. However, I haven't always known how to make crispy potatoes in a cast iron skillet. No, that took trial, error, more trial and more error.
    I tried cutting the potatoes super small. I tried leaving them in large chunks. Put the lid on. Took the lid off. I cooked them hot and cooked them on low.
    Sometimes they turned out crispy and sometimes they didn't.
    Well, if you are in that same trial and error process, trying to find, and savor, the elusive home cooked crispy potato, I am here to help!
    I can finally say I know what works. My family now enjoys consistently crispy potatoes in the cast iron skillet. And I am ready to share my secrets with you! :)
    How to Make Crispy Potatoes in a Cast Iron Skillet
    1. Preheat the skillet and oil. Leave it on medium heat for about five minutes. Throw one potato piece on. If it sizzles, you are ready to start cooking.
    2. Use an oil with a high smoke point, such as coconut oil, and use plenty of it. These are fried potatoes after all. If you don't use enough oil, they will not get good and crispy.
    3. Start with a well seasoned cast iron skillet. The potatoes will stick if the skillet isn't seasoned properly. I did this once, over five years ago, when I first started cooking with cast iron. I haven't had to do it again since!
    4. Make sure the skillet is clean. If there is anything stuck on the bottom of the skillet when you try to start cooking crispy potatoes they will stick. If the pan is well seasoned this shouldn't be a problem.
    5. Do not use a lid. Moisture is the enemy of the crispy potato. A lid would trap the moisture from the potatoes inside and make them all mushy. Leave the lid off throughout the entire cooking process.
    6. Use the right size skillet. I have one skillet that is bigger than my burner. The outside edges of the skillet do not get properly preheated. The potatoes stick on the outside edges and do not get crispy.
    7. Cook in small batches. Don't pile the spuds on top of each other in many layers. A single layer will work much better. When I am cooking potatoes for my family, I usually get two skillets going. That's the only way I can cooke enough potatoes for my family of six without overcrowding the skillet.
    8. Save salt for the end. Salt extracts moisture from vegetables. Since moisture is the enemy, this is a no go. When they are good and crispy, feel free to salt them liberally.
    9. Don't flip or stir the potatoes at all until they are good and crispy on the first side. Excess flipping will make them fall apart and stick.
    Crispy potatoes are certainly a treat, but you don't have to flock to your favorite restaurant to enjoy them. Just use these eight tips and you can have crispy potatoes in your own home.

    I used to dice my potatoes like that too. Now, I do mojo's (sliced rounds) instead. Less work and more surface browns to get that crispy crunch. Little ones like them because they can hold them in their hands. When I'm in a hurry, I microwave my potato to half done, slice it into rounds, and arrange in a hot skillet. Takes half the time to cook. Also, not sure why, but it takes less potatoes this way. Thanks, Lisa.

    I used to fry diced potatoes every day in my cast iron and I'd always flip them multiple times, as well as salt them throughout. They did get that mushy exterior in the beginning but after adding more butter with each stir/flip, that mushiness would crisp up pretty soon, and make for the most delicious potatoes.
    I haven't tried this method yet, but it looks like it's faster and creates a different kind of crispy exterior.

    You can bake the diced potatoes on cookie sheet 375-400 degrees
    add Oil And seasoning of choice to diced dry potatoes toss well

    I've actually made them in the cast iron but stick it in my oven. No preheating or anything but the key is like you said...don't stir only once or twice or they stick. I've loved this method as it keeps the stovetop cleaner! Good tip on the salting at the end.

    I tried this method for lunch today and it definitely works! I usually roast my potatoes on 450 for 30-60min (depending on how big/which way I cut them) but it was a time sucker for sure. This is so much faster than oven roasting! Thank you!

    My mom grew up using cast iron pans in her family. She actually has too much iron in her system. She can't use cast iron all the time now when she cooks. Cast iron pans are my favorite. I do think switching them up with stainless steel is a good idea to prevent yourself form getting too much iron in your system. Also, I grew up in a family where we cooked a lot with olive oil. My great grandparents came over to the US from Italy. My feelings about olive oil are different. Maybe, the quality of olive oil has changed? My grandma cooked with it for years and her doctor even noticed it. He could tell she used a lot of olive oil in her cooking. She is in her 90's now and hardly has any health problems. A lot of the women in our family outlive the men. I think it contributes to having always eaten a mediterranean diet. Love your cooking tips. Great for people like me who seem to always throw together dinner.

      I think cooking in stainless steel is fine. It’s the costed and Teflon pans we need to worry about

      Hereditary hemochromatosis ( elevated ferritin/iron) can be hereditary. There are two genes for it. Women tend to get diagnosed later in life when their menses ceases. This is natural blood letting. My patients have blood removed to reduce their iron. I need to use cast iron more, my iron is 7 which is too low.

    I love your videos, thanks for taking the time. I grew up with my mom's southern cooking. She fixed what we call 'home fries for breakfast. It's done the same as yours just add onions and diced green bell peppers. Serve with bacon and eggs.

    I know this is a video from over a year ago..but I gotta tell you.....I used your method for frying potatoes and oh my gosh...I can't believe how great they turned out!! I've been making fried potatoes for over 45 years...sometimes they came out great...sometimes they came out soggy and not brown much less crispy! I've been using your method and the potatoes turn out great!! I think I was flipping them too much, and my skillet was never hot when I put the potatoes in...anyway...I thank you & my husband thanks you! I love your TH-cam channel!

    I know coconut oil is very popular these days but we have a family food allergy. So I googled smoke points of different oils. What I found was that olive oil (374 degrees) has a higher smoke point than coconut oil (350), but grapeseed oil (420) is relatively high, so if that is a thing you are concerned about maybe switch to grapeseed. That is what we are going to use because of the allergy. Love your videos! Thanks for the tips.

    My, husband, kids, and I thank you! I'm using avocado oil with white potatoes and they are coming out perfect and so delicious every time.
    I figured out how to make crispy sweet potatoes, but with a nonstick surface. I used our pizza pizazz. I cut the potatoes, drizzled coconut oil all over and mixed them together. Put the potatoes on the pizazz pan and let it cook on dual mode (cooks the top and bottom at same time), for 20 minutes, flipped them and cooked another 20 minutes, shuffled them around on the pan and left them for a few more minutes, moved them to a paper towel lined bowl to let some of the oil soak up, salted, threw out the paper towel and tossed in the bowl to let the salt mix in, and they were as crispy as the white, skillet potatoes. The downside is that nonstick surface.

      What a good idea. The pizza pizazz was fun when my kids were little, but now it sits on a shelf in the garage. I just cannot seem to part with it for some reason. I never thought of cooking anything other than pizza on it. I can’t wait to try out your method for crispy potatoes.

    How do you care for your cutting boards?
    My mom used to make the best fried potatoes - she would add chopped onion, chopped okra and drizzle stirred up eggs over the top, then salt and pepper them well. Yum! Have you cooked apples for breakfast? Mom would make bacon gravy to go over the top. That was good too, but my husband's family fried apples for a side dish minus the gravy for dinner.

    Thanks for telling us Not to stir, I always find my potatoes look great when I start and then at the end I have either super crispy and under done so now I know to leave them alone and only flip once...will give it a go for tomorrow's breakfast and hope they look and taste as great as yours. I would love to do cast iron but I found it too hard on my wrists for some reason

    I make mine in the cast iron slkillet so I had to watch this video. I do use olive oil for mine, it doesn't smoke, at least not visibly. I preheat mine with EVOO, I add Lowry's seasoned salt and the key is learning to wait a little to let them get crispy. Also, before I start I pierce my potatoes and microwave them and I only put them in my skillet to brown them and get a crisp. Give it a try! I sometimes use nonstick (I don't worry about it, to each their own) but I do prefer the cast iron also. Nonstick you have to wait a little longer before moving your potatoes around to get a good crisp.

    This looks delicious. I have several well seasoned cast iron pans handed down to me from my mother and would love to try more things in them. I am rather "afraid" of them right now due to learning the techniques as I am used to nonstick, etc., so would love to see more recipes. These potatoes look great and I am going to try them!

      Kim Smith The more you use them the more you will love them. Here is a simple favorite.....first brown meatballs of any kind, homemade, store bought, whatever.... add "stew" veggies...carrots, onions, potatoes,...and a large can of regular V8 juice. Cook.

    Those potatoes look so good. Thanks LisaI stopped using olive oil a few years ago and I use grape seed oil now, it works great for high heat and really good for home made salad dressings. I buy Trader Joe's brand :)

    thank you for the tips. I just tried on my stainless steel wok, just that I have to spilt the cooking into 2 batches. turns out very nicely too! can u also do a video on rosti? my rosti always fall into pieces....

    Lisa, any tips on cooking Peameal (Canadian Bacon) in the cast iron. The bacon has a coating of cornmeal on the outside. It sticks like crazy.

    This was so interesting, I am just starting to get into cooking with cast iron and you make it look so easy. How long do you recommend leaving the potatoes before turning them? I do have gas and not electric but I tend to want to turn everything early and constantly so I will have to set a timer to remind me not to turn. Thank you for all the cooking tips!

    I was wondering did you say “7” was the equivalent of medium? Also, providing a rough estimate of time (10 minutes) before flipping would be nice to know. Looks like a great recipe! Thanks.

    Thank you SOOOO much for this video!! I have been doing it ALL wrong!! I would love more tips for using cast iron & how to take care of them. Is it possible to use canola oil (in your opinion)?

      I don't like canola oil because it is genetically modified. I will definitely be doing more cast iron videos. :)

    Glad to see you have a flat top. Always wondered if I could use cast iron on a flat top. Always afraid it would s scratch it.

      I have never worried about this. Maybe it does scratch it. I don't know. But it would never stop me from using my beloved cast iron! :)

    What about cooking with a gas stove? You mentioned on your bigger cast iron pan it not getting as hot around the edges. I know I don’t usually have the heat up that high, but will I need to?

    You said that you leave the potatoes on “for a pretty good while”! How long is “ a pretty good while”? How long do you cook 👩‍🍳 the second side? I am completely new at this. Sorry it these questions are stupid!😔

    How long exactly did these cook on the stove?? Mine never cooked through I had to put them in the oven🥲

      I don't have an exact time...I would say that I cut mine in a very small dice and didn't even turn them over for the first five minutes....

    How do I get my cast iron skillet to get a really smooth surface? I’ve been using mine for a few months but still has a rough surface, although works well and doesn’t stick.

    We love crispy potatoes. Sadly, my cast iron is too small to make a decent amount for our family.
    If you were to add onions, at what point would you do that?

      I make sure they are clean without getting them soaked in water...if they get too wet just dry them really well before cooking them

      I don't always wash the and they still turn out crispy. :)
