Coffee however is used to enrich the flavour of chocolate in cakes, creams and frostings etc, the hot water will bloom to cocoa powder while the coffee enhances its flavour. I use both vanilla and coffee in my chocolate cakes, only a few teaspoons worth is all you need and it won't make the cake taste like coffee either.
I'm also impressed that for someone who frequently does Lazy Man recipes, Jack made the cake and frosting from scratch, instead of relying on Duncan Hines box mixes and canned frosting.
Which makes me wonder why he didn't just make his own mayonnaise when that's even easier. The answer might have to do with a mayo fetish so my curiosity ends right here.

Actually, mayonnaise is a perfect addition to a cake because it really ups the flavor and there are a multitude of mayo cake recipes out there. Mayonnaise IS just eggs and oil, two things that any box cake mix requires, as they only contain the dry ingredients for a cake.

Hellman’s used to publish chocolate cake recipes using mayo, back in the 60’s. Mayo makes cakes moist because of it’s high fat content so you can actually skip the butter. Uncooked chocolate frosting is powdered sugar with about a stick of butter or less, plus a few tablespoons of milk or cream. Usually it’s vanilla extract OR espresso powder, not both. The total of 6 sticks of butter would work out to a quarter of a pound of butter per slice, for six servings…using that much fat and mayo would likely give the cake a greasy consistency

The cake is fine. Mayo is a normal ingredient in cakes. makes it moist. It's also a known substitute if you've trying to make a cake with no oil available. A little vanilla adds a lot of flavor to many different other flavors. Most cakes that I make use vanilla beans or vanilla extracts even those that are not vanilla. The only thing that's bad is a spoonful of Mayonnaise. I love mayonnaise, that's still nasty lol.

Here is a basic 'rule' for 'memorising' a cake/sponge. For the wet ingredients the 3 main parts should all weigh roughly the same. Equal amounts of egg/sugar/butter. The extra he put in(in this case mayo but can be something similar consistency) makes the cake more moist. Then if you want to look like you're 'winging it' just keep mixing in flour until it is a thick batter but still runs(just).

This was like: a trend in the late 80’s with the Good Housekeeping set for a while. I know I ate a devil’s food that was made with Hellmans Mayo back in the day. It was wonderful watching my mum gloat silently as she served it to a crowd of people who couldn’t believe the cake had Hellmans in it.

I don't think Jack knows what room temperature is. Or his house is colder than average. Whenever I bake, I wake up early and take my butter out first thing. That way while my cake or cupcakes are cooking, I can make the frosting. Or if I forget to take the butter out, I put them on top of the stove while my cake is baking for just a few minutes.
okay as a baker i'm here to answer your vanilla question. technically, yes, some recipes call for vanilla and chocolate together, as vanilla can add a little extra depth to the flavor, but it's certainly not common. most chocolate recipes only have chocolate, and i add vanilla to other flavor profiles more often than i add it to chocolate, because often the chocolate is so overpowering you don't really need it.

Mayonnaise in cakes is a well known baking secret going back nearly 100 years, dude. It's really good and gives a very moist, chocolatey cake.
Ik your right, you’re probably correct and it probably makes the best chocolate cake ever. But my brain refuses to accept The fact that mayonnaise makes chocolate cake better. I physically cannot believe it, no matter how RIGHT you are. It just sounds way too disgusting.

@@doggoadexx2680 Mayo is made of eggs right? you put eggs typically in baking goods as a binding agent and making things fluffly. Same deal, you don't taste the mayo when you mix it in with the batter.

Mayonnaise cake has been around a long time. My Mom used to say her favorite cake was her mother's mayonnaise cake, so it went back to at least the 1940s.

The cake is fine. Mayo is a normal ingredient in cakes. makes it moist. It's also a known substitute if you've trying to make a cake with no oil available. A little vanilla adds a lot of flavor to many different other flavors. Most cakes that I make use vanilla beans or vanilla extracts even those that are not vanilla. The only thing that's bad is a spoonful of Mayonnaise. I love mayonnaise, that's still nasty lol.
Agreed. You can also use sugar free applesauce.

Adding a bit of vanilla to a chocolate cake is as normal as adding a bit of salt in a dessert recipe - read, it is perfectly normal.

Mayonnaise is just Eggs and oil which is why it works on cakes. It just adds moisture.

Vanilla is a base flavor in a lot of pastry work, and without it in chocolate frosting, it wouldn’t taste right. It helps the balance. Mayonnaise does make good cakes, but you don’t use that much of it.

Here is a basic 'rule' for 'memorising' a cake/sponge. For the wet ingredients the 3 main parts should all weigh roughly the same. Equal amounts of egg/sugar/butter. The extra he put in(in this case mayo but can be something similar consistency) makes the cake more moist. Then if you want to look like you're 'winging it' just keep mixing in flour until it is a thick batter but still runs(just).

These cooking videos are always my favourite, they're always 100% funny.
This was like: a trend in the late 80’s with the Good Housekeeping set for a while. I know I ate a devil’s food that was made with Hellmans Mayo back in the day. It was wonderful watching my mum gloat silently as she served it to a crowd of people who couldn’t believe the cake had Hellmans in it.
Sort of disappointed there’s no raw chicken in this cake.

Absolutely amazing! He actually threw something together that is somewhat edible compare to all the other shit he’s made. Not saying that I would actually try it but it is a lot more edible than everything else that he’s done.

The vanilla just accents chocolate and enhances it. Like pepper on fresh fruit. Some flavors do weird things together.

adding mayo to a cake sounds disgusting, but it's actually acceptable to use in favor of replacing eggs and oil. Mayo is essentially Eggs and Oil so... and mayo is used in prison cakes. I know go figure.
You have to let the butter soften for a few hours before making icing.
He said the bars of butter were at room temperature.
@@CubsWin2012 I had to re-watch it. They were not soft enough. You can tell when he turns the blender on. I've made icing many times. Trust me.

I don't think Jack knows what room temperature is. Or his house is colder than average. Whenever I bake, I wake up early and take my butter out first thing. That way while my cake or cupcakes are cooking, I can make the frosting.
Or if I forget to take the butter out, I put them on top of the stove while my cake is baking for just a few minutes.

okay as a baker i'm here to answer your vanilla question. technically, yes, some recipes call for vanilla and chocolate together, as vanilla can add a little extra depth to the flavor, but it's certainly not common. most chocolate recipes only have chocolate, and i add vanilla to other flavor profiles more often than i add it to chocolate, because often the chocolate is so overpowering you don't really need it.

@@ibanheadhunter8317 I'm not a professional but yes mayonnaise is rather used for texture then taste cause all the other ingredients overlap it ,in which you can't yk taste the mayo but most professional chefs usually use 1/2 cup of mayo (don't trust me on the measurements) but basically mayo used for texture not taste. a whole cake made of mayo is bad in my opinion

Almost every dessert recipe I've seen calls for vanilla, regardless of the other ingredients. It's basically like how salt is added to everything.

Actually he made the cake pretty well mostly cause mayonnaise just makes the cake more moist and the vanilla essence helps give more flavor to the frosting so I'm empresded jack made a good cake
